1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

24 ounces Simply Potatoes Traditional Mashed Potatoes
1 lb ground beef
1 (15 1/4 ounce) can Hunt's Dinner Starters Seasoned Tomato Sauce for Meatloaf
9 ounces sweet corn
1 1/2 cups shredded cheese

Steps:

  • Preheat oven to 350.
  • In medium sauté pan brown ground beef on medium heat. Drain.
  • Add can of meatloaf starter with two tablespoons sugar and heat for five minutes.
  • Prepare: Simply Potatoes as directed on package adding salt and pepper to taste.
  • Prepare: corn as directed on package and drain if needed.
  • Using 6 4 1/2 inch ramekins or 9x12-baking dish.
  • Spray with non-stick spray.
  • Divide meatloaf mix evenly in each ramekin. Next add ½ cup mashed potatoes followed by ¼ cup corn. Place all ramekins on foil lined cookie sheet and bake 25 minutes. Add ¼ cup cheese to each and bake another 10 minutes or until cheese melts.

This is another meatloaf--everyone makes them. I think it should be proclaimed the national food of the USA. But, this recipe is very good--simple but good. It must be the combination of all that is in it. I like things that are easy. The sauce that goes over this adds to the flavor. I have one other meatloaf that I have listed and both are great. This makes a huge one. If you don't want it as big as it is, see my recipe for Italian Stuffed Pepper (made out of Meatloaf Recipe #102545) and you can use part of this mixture in that recipe which is out of this world.

2 slices bread, made into crumbs
1/3 cup oatmeal
4 eggs (beaten)

I reviewed multiple recipes and combined some different ingredients. This was such a hit with my family. Accompany this Meat Loaf with Mac-n-Cheese and sweet corn as sides.

1 lb lean ground beef
1 lb maple sausage, pork (Any Kind)
1 lb ground turkey
1/2 large onion (fine chop)
2 eggs
1/2 cup 2% low-fat milk
1 1/2 cups stove top pork stuffing mix
1 1/4 cups Heinz ketchup
1/4 cup tiger sauce
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon ground pepper
3/4 tablespoon garlic powder

Steps:

  • 1. Mix all ingredients together, keeping mixture light and chunky, don't over mix!
  • 2. Place mixture in loaf pan sprayed with Pam, dent top of loaf and drizzle Heinz Ketchup into dent, and over top of loaf.
  • 3. This recipe should make two loafs, place in loaf pans at 375 F for 1 hour and 15 minutes.
  • 4. Let loafs rest for 10 minutes before removing to serving plate and slicing. Drain loaf pans of excess oil and juices before serving.
  • 5. Garnish with parsley and green onion tops.

2 lb ground beef
1 lb ground pork (unseasoned, not sausage)
1 medium onion, diced or grated
2 to 4 clove garlic, minced
1 large potato, peeled and grated
2 medium zucchini, grated
2 - 3 carrots, grated
1/2 bell pepper, diced or grated
1 c uncooked old fashioned oatmeal
3 large eggs
2/3 c milk
1/2 c ketchup
1 - 2 Tbsp brown sugar
salt to taste (i use kosher salt)
pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees F. Crumble the ground beef and ground pork into a large mixing bowl. Add all ingredients and mix well with your hands. (Disposable kitchen gloves come in handy and help keep your manicure nice for this step but aren't a necessity.)
  • 2. Shape into two large loaves. Bake side by side in a 13x9 inch pan, leaving at least a couple inches between the loaves. (I always use a glass pan but metal works as well) for 1-1/2 to 2 hrs.
  • 3. Let stand for ten minutes after removing from oven.
  • 4. This recipe makes two good sized loaves. It is our tradition that the day after a meatloaf dinner, the leftovers are sliced and fried in a cast iron skillet for sandwiches (on white bread with ketchup), and in order to have leftovers I had to increase the size of the recipe to what you see here.

I developed this recipe to use some leftover meatloaf because my son does not appreciate the cold meatloaf sandwich with all the fixings that the rest of the family enjoys. There always has to be one person who doesn't conform; it is a little known, unwritten rule. But as long as every family has one, I don't feel bad. This one's for you Adam, love you! By the way, he thought this sandwich was great! (Amounts are estimated, just wing it as you go and use what you have. Zaar won't accept leftover meatloaf so had to call it meatloaf mixture.)

1 1/2 cups spaghetti sauce
