2 tablespoons olive oil
1 cup diced onions
3 cloves finely chopped garlic
1 1/2 lb ground chicken
1 cup Progresso™ panko crispy bread crumbs
1/4 cup milk
1 egg
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes, if desired
6 oz mozzarella cheese, cut into planks
1 cup marinara sauce
1/2 cup Progresso™ panko crispy bread crumbs
1 clove finely chopped garlic
2 tablespoons butter
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 400°F. Spray 9x5-inch loaf pan with cooking spray.
  • In 8-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Cook onions, 3 cloves garlic and a dash of salt in oil about 5 minutes or until onions are soft and translucent. Set aside to cool.
  • In large bowl, mix remaining tablespoon olive oil, the ground chicken, 1 cup bread crumbs, the milk, egg, 2 tablespoons Parmesan cheese, 2 tablespoons parsley, the salt, pepper and pepper flakes. Add onion and garlic mixture; mix well.
  • Pat half of meatloaf mixture in pan. Arrange cheese planks down center of meatloaf, leaving 1/2 to 1 inch of cheese-free space around all edges. Cut cheese in half as needed to fit. Cover cheese with remaining meatloaf mixture; press around edges to seal in cheese. Spread half of the marinara sauce over top of meatloaf.
  • Bake about 1 hour or until meat thermometer inserted in center of loaf reads 165°F. Cool 10 to 15 minutes. Meanwhile in 6-inch skillet, toast 1/2 cup bread crumbs, 1 clove garlic and the butter until golden. Scrape into small dish to cool slightly. Stir in 3 tablespoons Parmesan and 2 tablespoons parsley. Top meatloaf with mixture.
  • Serve with remaining marinara sauce.

1 egg
1/4 cup breadcrumbs
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 -2 garlic clove, finely minced
1 small onion, grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated parmesan cheese
1/2 cup pasta sauce (homemade or store bought)
1/2 cup shredded Italian cheese blend
minced parsley (to garnish)

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside.
  • In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce.

1 (15 ounce) can tomato sauce (or your homemade stuff)
1 clove garlic, minced
2 teaspoons italian seasoning
4 -6 slices mozzarella cheese

Steps:

  • Place your slices of meatloaf flat on the bottom of a 9 X 13 cooking dish (smaller if you have less pieces), touching but not overlapping.
  • Mix together tomato sauce, garlic, seasoning and pour over the meatloaf.

1/3 cup panko breadcrumbs
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 large cloves garlic, minced
2 large eggs, at room temperature
1 small onion, finely chopped
1/4 cup extra-virgin olive oil
1 medium eggplant, trimmed and cut into six to eight 1/2-inch-thick slices
1/4 teaspoon kosher salt
1/4 teaspoon finely ground black pepper
1/3 to 3/4 cup of jarred tomato-basil sauce, such as Giada De Laurentiis for Target, plus extra for serving

Steps:

  • Preheat the oven to 375 degrees F.

1 pound ground pork
2 teaspoons kosher salt

1/8 teaspoon nutmeg
1 cup dry bread, cut in 1/2-inch cubes, soaked in 1 cup milk until softened
2 eggs, beaten
3 tablespoons chopped parsley
1/2 teaspoon dried oregano
5 ounces cooked broccoli rabe or spinach, blanched, squeezed dry and chopped (about 3/4 cup)
1 cup pitted green olives, roughly chopped
1 ounce grated Parmesan (about 1 cup)
5 ounces provolone, cut in 1/4-inch dice (about 1 cup)
5 bay leaves
4 tablespoons olive oil
1 cup diced onion
1 whole garlic clove
Salt, to taste

1 1/2 cups crushed tomatoes

Steps:

  • Put veal and pork in a large mixing bowl. Add salt, black pepper, red pepper, fennel seed and nutmeg. Knead mixture with hands to incorporate.
  • Add soaked bread with milk, eggs, parsley, oregano, broccoli rabe, olives, Parmesan and provolone. Mix again with hands and knead to make sure all ingredients are distributed evenly. Pat mixture into a free-form loaf and place in a 9-by-13-inch baking dish. Press bay leaves on top. You may complete this step several hours, or a day in advance, of baking.
  • Make tomato sauce: Put olive oil in a nonreactive pan over medium heat. Add onions, garlic clove and a little salt, then cook, stirring, until translucent, about 8 to 10 minutes. Add tomato purée, crushed tomatoes, red-pepper flakes and basil sprig. Simmer for 10 minutes. Taste and adjust seasoning. Sauce may be made in advance, if desired.
  • Heat oven to 400 degrees. Spoon sauce over meatloaf, letting it spill over into the baking dish to surround loaf. Sprinkle top of loaf with grated pecorino and provolone, then sprinkle with bread crumbs.
  • Bake at 400 degrees for 30 minutes, then cover, reduce heat to 350 and cook for 30 to 45 minutes more, until internal temperature is 150 degrees. Let rest at least 10 minutes before slicing. Top each serving with a good spoonful of sauce and garnish with basil leaves, if using.

1 Tbsp italian seasoning

  • 1. Preheat the oven to 350.
  • 2. In a large bowl, combine the ground chicken, eggs, breadcrumbs, Italian seasoning, , garlic and Parmesan cheese. Mix with your hands.

2 1/2 lbs italian seasoned ground turkey (Jennie O)
1 yellow onion
10 white mushrooms
6 garlic cloves
1 carrot
1 cup Italian seasoned breadcrumbs
2 eggs
3/4 cup barbecue sauce
6 ounces shaved parmesan cheese
seasoned pepper
4 tablespoons extra virgin olive oil

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Dice onion and mushrooms. Mince garlic. Sautée in a skillet with EVOO until onions are golden and translucent. Season with seasoned pepper. Remove from heat.
  • 3. Grate carrot into a large mixing bowl then add 1/2 cup BBQ sauce, 4 oz shaved Parmesan cheese and remaining ingredients and blend thoroughly. When finished, mixture should be firm enough to maintain a loafed shape. If needed, add more bread crumbs to stiffen mixture.
  • 4. Place ground turkey mixture into 5 small loaf pans approx 5x3 inches (I purchased mine from grocery store in a set of 5 disposable pans with lids).
  • 5. Bake at 350 degrees for approximately 40-45 minutes. With approximately 15 min remaining, spread remaining BBQ sauce over loafs then sprinkle with remaining Parmesan cheese. When done internal temp should be 165 degrees F and cheese on top melted and golden.

¼ cup milk
1 cup Italian-seasoned bread crumbs
¼ cup grated Parmesan cheese
1 pound leftover meatloaf, cut into 8 slices
2 tablespoons vegetable oil
1 (28 ounce) jar spaghetti sauce
1 cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Beat eggs and milk together in a shallow bowl. Stir bread crumbs and Parmesan cheese together in another shallow bowl. Dip meatloaf slices, one at a time, into the egg mixture and bread crumb mixture to coat all sides.
  • Heat oil in a large oven-safe skillet over medium-high heat. Cook the coated meatloaf slices until browned, turning once halfway, about 5 minutes. Drain off oil.

1 c parmesan cheese, shredded
1 c mayonnaise
1/2 c bread crumbs, plain
1 tsp thyme
1 tsp parsley
1 egg
1 pkg turkey sausage, cooked (jimmy dean provides a bag already cooked in the bacon section of the grocer)
2 Tbsp garlic powder
1 pinch minced onion (optional)

Steps:

  • 1. Preheat oven to 350 degrees. Have loaf pan at the ready.
  • 2. Combine all ingredients in a bowl. Squish with hands until well mixed. Put mixture in loaf pan and bake for 30-45 minutes until done. (Juices will run clear and internal temperature will reach 170 degrees.)
