THE BEST MEATBALLS

The Best Meatballs image

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Time 50m

Yield 8

Number Of Ingredients 11

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

VENISON MEATBALLS

"I learned to cook game while my husband was a forestry student," recalls Sheila Reed from Fredericton, New Brunswick. "We lived off the land as much as possible. I still enjoy these savory meatballs in a slightly sweet barbecue sauce. I make a big batch for an annual pool party and there are never any left."

Tips:

  • Use a combination of ground meats. This will give your meatballs a more complex flavor and texture. Beef and pork are a classic combination, but you could also try lamb, veal, or turkey.
  • Don't overwork the meat. Overworking the meat will make the meatballs tough. Mix the ingredients just until they are combined.
  • Use bread crumbs or rice to help bind the meatballs. This will help keep them from falling apart.
  • Add plenty of flavorings to the meatballs. This could include herbs, spices, garlic, onion, or cheese.
  • Brown the meatballs before simmering them. This will give them a nice crust and help keep them moist.
  • Simmer the meatballs in a flavorful sauce. This will help infuse them with even more flavor.
  • Serve the meatballs with your favorite sides. Mashed potatoes, pasta, or rice are all good options.

Conclusion:

Making meatballs is a great way to use up leftover meat and vegetables. They are also a versatile dish that can be served as an appetizer, main course, or side dish. With so many different ways to make meatballs, you're sure to find a recipe that you'll love. So next time you're looking for a delicious and easy meal, give meatballs a try!
