Time 3h10m

Yield 16 serving(s)

Number Of Ingredients 15

olive oil
1 lb bone in country-style spareribs or 1 lb pork neck bones
1 lb mild Italian sausage
5 garlic cloves (I use 5)
1/2 cup tomato paste, less than
3 (14 1/2 ounce) cans peeled whole tomatoes (or if you want use peeled fresh tomatoes from the garden)
salt and pepper
fresh basil leaf (you can buy it in the produce section)
3 garlic cloves, minced
1 lb ground beef
3/4 cup Italian breadcrumbs
3 eggs
1/2 cup parmesan cheese or 1/2 cup finely grated pecorino romano cheese
3 tablespoons chopped fresh Italian parsley
salt and pepper

Steps:

  • SAUCE: Heat oil in large heavy pot (use a seasoned pot if you have one). Place the pork in the pot and brown until just about cooked. Transfer pork to plate. Do the same with the sausage and transfer to plate. Leave fat in pot. Add whole peeled garlic cloves cook until tender. Put garlic on plate with meat and stir in tomato paste until "saucy". Chop up tomatoes leaving the tomato juice in the cans (I use my chopper) and add them to the pot.
  • Then add 1/2 of one can of the juice to the pot. Add salt and pepper to taste. Add the meats and garlic to the sauce and bring to a boil. Turn down to low and cook for about 1 1/2 hours. Leave the sauce on low and remove all the meat and garlic cloves.
  • Mix all ingredients for meatballs and shape into balls. Add to sauce turn up just a little higher than low and let cook the raw meatballs until they are done (1/2 hour) THATS IT!
  • Now this is an old recipe, but I have seen it in the sopranos cookbook and this is a bit different.
  • I used this sauce to make the ziti al forno from the sopranos cookbook (Recipe #73939) and it was the most amazing thing I have ever eaten, so I posted that too.

1 pound beef bottom round, cut 1/4-inch thick or 1 pound lean pork, cut 1/4-inch thick pieces
1 garlic clove, peeled
1 tablespoon freshly grated Pecorino Romano
1 tablespoon chopped Italian parsley
Salt and pepper
1 cup olive oil
1 pound ground lean beef
1/2 pound ground veal
1/2 pound ground pork
2 eggs
1 cup freshly grated Pecorino Romano
1 1/2 tablespoons chopped Italian parsley
1/2 garlic clove, minced, optional
Salt and pepper
2 cups bread crumbs
2 cups lukewarm water
1 cup olive oil
1 pound piece lean beef

1 pound hot or sweet Italian sausage

4 garlic cloves, peeled
3 tablespoons tomato paste
1/4 cup water
3 (35-ounce) cans San Marzano plum tomatoes
Salt and pepper
Beef or pork braciola, recipe above
Meatballs, recipe above

Steps:

  • Braciola: With meat cleaver or any heavy kitchen utensil, pound the meat slices between 2 sheets of waxed paper. Rub each piece of meat with the garlic clove. Sprinkle each slice of meat with and equal amount of cheese and parsley. Add salt and pepper, to taste.
  • Roll the meat up tightly like a cigar, and tie with butcher's twine to keep meat rolled while cooking. Heat oil in a large saucepan over high heat. Add the meat rolls and fry for about 6 minutes or until evenly browned. Reserve meat for gravy.
  • Meatballs: Combine beef, veal, and pork in a large bowl. Add eggs, cheese, parsley, garlic, and salt and pepper to taste. Using your hands, blend ingredients. Add bread crumbs to mixture. Slowly add water, 1 cup at a time, until mixture is moist.
  • Shape meat mixture into balls, approximately 2 1/2 to 3-inch balls.
  • In a large skillet, heat oil. The oil should be very hot, but not smoking. Place the meatballs in pan, and fry in batches. When the bottom half of meatball is browned and slightly crispy, turn over and cook top half. Remove from pan and drain on paper towel.
  • Sunday Gravy: In a large saucepan, heat oil over medium heat. Add the garlic and toss to coat with oil. Cook meat a few pieces at a time, about 5 minutes, until nicely browned on all sides. Remove meat from pan and set aside. When garlic cloves have browned, remove and discard them.
  • Combine tomato paste and water and stir into oil. Stirring constantly, cook for 2 to 3 minutes. Add the tomatoes and juice, raise heat, and bring to a boil. Using a tomato can, measure 2 cans of cold water, add to pan, and return to a boil.
  • Return beef and pork to the sauce, and add salt and pepper, to taste. Bring to a boil and allow to boil for 5 minutes. Lower heat and partially cover pan. Cook for approximately 2 hours stirring occasionally until meat is almost falling apart and sauce is thick.
  • One hour before sauce is ready, add the beef or pork braciola and sausage. Add the meatballs at the same time.
  • To serve: Remove meat from sauce. Serve sauce over pasta, and the meats on a separate platter.

Categories     main-dish

Time 2h5m

Yield Serves 6 to 8

Number Of Ingredients 29

3 tablespoons unsalted butter
1 onion, finely chopped
2 small ribs celery, finely chopped
3 cloves garlic, finely chopped
Salt and pepper
Salt and pepper
2 tablespoons fresh thyme, finely chopped
1/4 cup dry sherry or white wine
3 slices 1-inch-thick, good-quality white bread, crusts trimmed
About 1 cup whole milk
2 pounds ground sirloin
1/4 cup chopped flat-leaf parsley
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
1 large egg plus 1 yolk, lightly beaten
Olive oil cooking spray
2 1/2 to 3 pounds russet potatoes, peeled and chunked*
Salt
1 cup sour cream
1/4 to 1/2 cup half-and-half or heavy cream
3 to 4 tablespoons horseradish, to your taste
Coarse black pepper
1/4 to 1/3 cup chopped chives
4 tablespoons (1/2 stick) unsalted butter
3 tablespoons all-purpose flour
3 tablespoons Worcestershire sauce
Coarse black pepper
3 cups beef stock
1 egg yolk, lightly beaten

Steps:

  • For the meatballs: Preheat the oven to 400 degrees F.
  • Heat a saute pan over medium to medium-high heat; melt the butter. Add the onion, celery and garlic; season with salt, pepper and thyme. Cook to tender, 7 to 8 minutes. Deglaze with the sherry or wine; cool.
  • Soak the bread in milk while the veggies cool.
  • Place the meat in mixing bowl; season with salt and pepper. Squeeze the liquid out of the bread and crumble into the bowl. Add the cooked vegetables, parsley, Worcestershire, mustard and eggs; combine to mix but do not overwork.
  • Place parchment paper on a baking sheet and roll the meat into 24 balls. Spray with cooking spray and roast about 15 to 18 minutes until lightly crispy and golden and cooked through. Cool and store for a make-ahead meal. Reheat, covered, in a preheated 375-degree F oven with a splash of water or they will stick in the bottom of the dish. Once meatballs are hot, uncover and crisp up for 5 minutes.
  • For the mash: Fill a pot halfway with cold water. Peel and add the potatoes as they are chopped or, if you peeled up the potatoes ahead, place in a pot and fill with fresh water. Add enough water to cover the potatoes, then cover the pot and place over high heat to bring to a boil. Once the water boils, remove the lid, salt the water and cook, uncovered, at a low boil until tender to fork. Drain and return to hot pot. Mash the potatoes with the sour cream and cream, a liberal dose of pepper, horseradish and chives; salt to your taste. If you wish to make the potatoes ahead of time and hold them for a couple of hours, place an inch of water in a large pot and bring to boil, then reduce heat to low and place a smaller pot, filled with the potatoes, into simmering water and cover that pot.
  • For the gravy: Melt the butter in saucepan over medium-high heat. Whisk in the flour and bring to a bubble; whisk in the stock and Worcestershire, season with pepper and thicken. Temper the egg yolk by lightly beating a ladle of gravy into it, then whisk into the sauce. Cool and store; reheat over medium heat, adding a little more stock, if necessary, to loosen.
  • Serve in shallow bowls. Spoon in enough potatoes to gently mound up in a bowl, then arrange a few meatballs in the center of the mound. Ladle gravy down over top and garnish with parsley.

Time 2h30m

Yield 8-10 serving(s)

Number Of Ingredients 18

3 lbs ground beef
2 cups wet stale Italian bread or 2 cups breadcrumbs (see instructions below)
3 eggs
1/2-1 cup milk (see instructions below)
1/2 cup chopped fresh flat-leaf Italian parsley or 2 tablespoons parsley flakes
1 1/2 teaspoons dried basil
4 tablespoons grated parmesan cheese
1 tablespoon salt
1 teaspoon pepper
3 cloves minced garlic or 1 tablespoon garlic powder
olive oil or corn oil, for frying
2 (29 ounce) cans tomato puree
1 (29 ounce) can water
1 (12 ounce) can tomato paste
3 cloves garlic, crushed
2 tablespoons dried basil
1/8 cup red wine or 1/8 cup sugar
1 dash red pepper flakes, maybe (HALT!! Add no more spices!)

Steps:

  • It's preferable to use the stale bread rather than the bread crumbs.
  • Break it up and soak it in warm tap water until is starts to soften.
  • Squeeze it with your hands to get out excess water, then"smush" it with your fingers.
  • Use the lesser amount of milk if using the wet stale bread.
  • Use the greater amount if using the bread crumbs.
  • Mix all the meatballs ingredients well.
  • Form into balls about 1 1/2 inches in diameter.
  • Slightly flatten each meatball.
  • Brown very well in hot oil on both sides.
  • (Can also be baked on an oiled pan in a 425 degree oven. Need to be turned to brown both sides).
  • Add the gravy ingredients to a large pot and add the browned meatballs.
  • Bring to a gentle boil then simmer.
  • 1 1/2 hours is probably enough, but the longer, the better.
  • Even better heated over the next day.
  • *You can also add Italian sausage to this.
  • Brown it well in the same pan in which you've browned the meatballs then add to the gravy pot.
  • You need to probably simmer the sauce for AT LEAST 1 ½ hours if you add sausage to make sure the sausage is cooked through.

SWEDISH MEATBALLS AND GRAVY

Swedish Meatballs and Gravy image

This recipe was used at church when I was a child for father-daughter or mother-son dinners. Each church circle would make part of the meal, and seems my mom always made the meatballs and gravy (along with several other circle members.) Everyone who made meatballs and gravy would bring theirs to the church and 'meld' all together...

Time 1h15m

Number Of Ingredients 6

1 1/2 lb hamburger
1 1/2 c oatmeal
1/2 c chopped onion
1 1/2 tsp salt
1 1/2 tsp cornstarch
2 beaten eggs

Steps:

  • 1. Mix all ingredients together with hands. Roll into balls about walnut size.
  • 2. Brown in 1/2 Cup Vegetable Oil or Lard. Remove from hot oil when browned.
  • 3. Add to hot fat - 6 Tablespoons Flour, 6 Beef Bouillon cubes stir until flour and bouillon are mixed then ADD: approximately 5 Cups COLD water. Cook on high until smooth; stir occasionally. Turn down heat and add meatballs and simmer over LOW heat for 30 minutes or until ready to serve OR put meatballs in roaster pan and pour gravy over meatballs and place in oven @ 325 degrees Fahrenheit for 45 minutes.
  • 4. Serve with mashed potatoes, a vegetable, salad, and dinner roll. Complete your meal with a light dessert.

Tips:

  • Use a combination of ground beef and pork for the meatballs. This will give them a more flavorful and juicy texture.
  • Soak the bread crumbs in milk before adding them to the meatball mixture. This will help to bind the ingredients together and prevent the meatballs from becoming dry.
  • Season the meatball mixture liberally with salt, pepper, and garlic powder. You can also add other herbs and spices to taste.
  • Form the meatballs into small, even-sized balls. This will help them to cook evenly.
  • Brown the meatballs in a skillet over medium heat before adding them to the sauce. This will help to seal in the juices and prevent them from becoming dry.
  • Simmer the meatballs in the sauce for at least 30 minutes, or until they are cooked through. This will allow the flavors to meld and the meatballs to become tender.
  • Serve the meatballs and gravy over your favorite pasta, rice, or mashed potatoes.

Conclusion:

Meatballs and gravy is a classic comfort food that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the best meatballs and gravy that your family and friends will love.
