4 to 5 medium zucchini
1-1/2 cups soft bread crumbs
1 tablespoon minced fresh parsley
1/4 cup grated Parmesan cheese
1 small onion, chopped
1 large egg, lightly beaten
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds lean ground beef
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 cup water

Steps:

  • Cut each zucchini in half lengthwise; cut a thin slice off the bottoms so they sit flat. Scoop out pulp, leaving 1/4-in. shells. Finely chop pulp. , In a large bowl, combine the pulp, bread crumbs, parsley, Parmesan cheese, onion, egg and seasonings. Crumble beef over mixture and mix well. , Fill zucchini shells with meat mixture. Place in a 13x9-in. baking dish. Combine tomato soup and water; pour over zucchini. Bake at 350° for 45-50 minutes.

4 zucchinis
1 tablespoon salt
1 large egg
1 cup ricotta cheese
1 cup bread crumbs
1 tablespoon italian seasoning
3 tablespoons fresh basil, chopped
3 tablespoons fresh parsley, chopped
1 teaspoon pepper
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, chopped
4 cups cooked pasta
marinara sauce

Steps:

  • Cut off the bottoms of each zucchini and use a cheese grater or box grater to shred into a large bowl. Sprinkle salt on top, toss, and let rest in a colander in the sink for 20 minutes to pull out excess moisture.
  • Preheat the oven to 375˚F (190˚C).
  • Using a dish towel, squeeze out excess liquid from the shredded zucchini. Move the zucchini to a dry bowl and add the egg, ricotta bread crumbs, Italian seasoning, basil, parsley, pepper, olive oil, onion, and garlic. Stir until evenly mixed, then form the mixture into golf ball-sized balls.
  • Bake for 30-40 minutes, or until browned, flipping halfway through.

3 large zucchini, chopped
1 cup/250 ml smoked scamorza, cubed, or as much as you need
1 cup/250 ml Pecorino cheese, cubed
Small bunch fresh mint leaves, finely chopped
2 eggs
1 cup/250 ml bread crumbs, plus extra for coating
1 1/2 cups/375 ml extra-virgin olive oil, for frying
20 cherry tomatoes, halved
4 fresh basil leaves, torn
Salt
1/4 cup/50 ml extra-virgin olive oil

Steps:

  • For the meatballs: Add the chopped zucchini to salted boiling water for 4 minutes. Drain the excess water from the zucchini. Transfer the zucchini to a baking dish and allow to cool. Squeeze out the excess water from the boiled zucchini.
  • In a mixing bowl, add the zucchini, scamorza cheese, Pecorino cheese, fresh mint leaves, eggs, and bread crumbs. Mix well until the ingredients are evenly distributed. With your hands, shape the meatballs into the size of golf balls. Coat the meatballs in the bread crumbs.
  • Heat olive oil in a deep frying pan. Gently place the meatballs into the hot oil and let fry until golden and crispy. Transfer to a plate lined with an absorbent paper towel to drain the excess oil. Serve with the tomato salad.
  • To make the tomato salad: Add the cherry tomatoes, basil, and salt to a bowl. Drizzle with olive oil and mix together.

1 cup shredded zucchini (about 1 medium)
Salt
1 egg
1 lb ground turkey
1/2 cup Progresso™ Italian style bread crumbs
1/3 cup grated red onion
2 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, grated
About 1/2 cup pearl mozzarella
1 box (1 lb) orecchiette (tiny disk) pasta
2 tablespoons olive oil
1/2 cup finely chopped onion
2 cloves garlic, finely chopped
2 cans (14.5 oz each) Muir Glen™ organic fire roasted diced tomatoes, undrained
Salt and pepper to taste
3 tablespoons chopped fresh basil leaves

Steps:

  • Heat oven to 400°F. Line sheet pan with cooking parchment paper or silicone nonstick baking mat. Sprinkle grated zucchini lightly with salt; toss to coat. Set aside while preparing other ingredients.
  • Squeeze out as much of the zucchini liquid as you can; there will be a few tablespoons. Discard liquid.
  • In large bowl, gently mix all Meatball ingredients except mozzarella cheese until combined. To make each Meatball, scoop 1 teaspoonful mixture into hand; flatten into a patty. Place 1 mozzarella pearl in center of patty; enclose cheese completely inside mixture. With hands, roll into ball; place in pan. Repeat to make remaining meatballs.
  • Bake in center of oven about 20 minutes or until thermometer inserted in center of meatballs reads 165°F and cheese is melted.
  • Meanwhile, cook pasta to al dente as directed on box.
  • To make Sauce, in 10-inch skillet, heat olive oil over medium heat. Add chopped onion; cook until translucent. Add chopped garlic; cook 60 seconds longer. Stir in tomatoes with liquid. Simmer until most of liquid has been reduced. Add salt and pepper to taste. Remove from heat; stir in basil.
  • Toss cooked pasta, meatballs and sauce. Garnish with additional fresh basil.
