1 package (12 ounces) frozen fully cooked Italian meatballs
2 large sweet onions, sliced
2 garlic cloves, minced
1 teaspoon beef bouillon granules
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
5 cups beef broth
1 bottle (12 ounces) pale ale or additional beef broth
18 slices French bread baguette (1/4 inch thick)
12 slices Muenster or cheddar cheese

Steps:

  • In a 4-qt. slow cooker, combine the first 9 ingredients. Cook, covered, on low until onions are tender, 8-10 hours., Ladle soup into 6 broiler-safe 16-oz. ramekins. Top each with 3 slices of bread and 2 slices of cheese. Broil 4-6 in. from heat until cheese is melted, 2-3 minutes. Serve immediately.

I threw this concoction together at the last minute, the other night when I got home from work and my husband, grandson and son-in-law loved it. I just used what I had in the cabinet and it worked. I love it when my concoctions actually taste good. lol :)

1 bag plain frozen meatballs
1 can(s) cream of mushroom w/roasted garlic
1 can(s) cream of chicken soup
1 can(s) cheddar cheese soup
1 packet liptons onion soup
4 Tbsp sour cream
1 pkg no yolk noodles
salt and pepper to taste

Steps:

  • 1. In a large pot, pour meatballs, soups, onion soup packet, and sour cream. Stir to mix well Cover and turn heat on medium. Simmer for about 15 to 20 minutes, stirring occasionally.
  • 2. In seperate pot, boil noodles according to package directions. When done, drain and pour back in pot.
  • 3. Pour meatball mixture into noodles and stir to coat all noodles. Add a vegetable or two, rolls, and vuala, you have a quick and easy meal.
  • 4. Note: I only had about 2/3 of a bag of meatballs so you may need to add a can of plain cream of mushroom soup or a can of milk to make enough gravy for the whole bag.

2 pkg udon noodle soup, beef flavored
10-12 medium frozen meatballs
4 Tbsp soy sauce
2 Tbsp scallions, chopped
2 Tbsp cilantro, chopped
2 medium garlic cloves, chppped
1 tsp ginger, grated
1 small habanero pepper, chopped
1 tsp sesame oil
2 1/2 c water

Steps:

  • 1. bring water to a boil in a pot. add the meatballs, soup base, garlic, ginger, sesame oil, habanero pepper and soy sauce to the pot. boil for 3 minutes. add the noodles and 1/2 of the scallions and cilantro. boil for an addtional 2-3 minutes. put soup in a bowl and garnish with the remaining scallions & cilantro. **you can substitute the fresh ginger and garlic with powdered garlic and ginger to taste**

1 (10.5 ounce) can cream of mushroom soup
