3/4 pound lean ground beef (90% lean)
3/4 cup finely shredded potatoes
1/4 cup finely chopped onion
2 tablespoons chopped green pepper
1 large egg, beaten
1/4 teaspoon salt
1 tablespoon canola oil
1 cup tomato juice
1 tablespoon all-purpose flour
1/4 cup water

Steps:

  • Combine the first 6 ingredients. Shape into 4 patties; press to flatten slightly. In a large skillet, heat oil over medium-high heat. Brown patties on both sides; drain. Add tomato juice. Simmer, covered, until a thermometer inserted into meat reads 160°, 20-25 minutes. Remove patties to a serving platter; keep warm. , Whisk flour into water; gradually add to skillet. Reduce heat to medium-low; cook, stirring constantly, until thickened. Spoon over patties. Serve immediately.

1/2 lb. ground pork
1/2 tsp. garlic powder
1/2 cup coarsely chopped cilantro leaves and tender stems, divided
2 1/4 tsp. kosher salt, divided
3/4 tsp. chili powder, preferably chipotle, divided
1 Tbsp. vegetable oil, plus more for greasing
2 ears corn on the cob
1 large tomato, chopped into 1/2" pieces
1/2 small red onion, finely chopped
1 avocado, halved, cut into 1/2" pieces
1 serrano chile, seeded, finely chopped
3 Tbsp. fresh lime juice

Steps:

  • Process beef, pork, garlic powder, 1/4 cup cilantro, 1 1/4 tsp. salt, and 1/2 tsp. chili powder in a food processor until evenly distributed and well combined, about 2 minutes. Roll mixture into 4 balls.
  • Rub one 16x12" piece of parchment with a little bit of oil. Place 1 ball of meat on one half of oiled paper, then fold other half over. Using a rolling pin or wine bottle, gently roll meat into a very thin oval between parchment (it should be about 9x6"). Transfer, with parchment, to a rimmed baking sheet. Repeat with 3 more sheets of paper and remaining meat. Chill until ready to use.
  • Slice kernels off ears of corn and transfer to a large bowl. Add tomato, onion, avocado, chile, lime juice, and remaining 1/4 cup cilantro, 1 tsp. salt, and 1/4 tsp. chili powder and stir to combine. Let sit while you cook the patties.
  • Heat 1 Tbsp. oil in a large heavy (preferably cast-iron) skillet until smoking. Working one at a time, peel patty off greased parchment and sear until browned and crisped on the bottom, about 2 minutes. Turn and cook just until cooked through, about 1 minute more. Transfer to a plate and repeat with remaining patties.
  • Top patties with corn salsa.

3/4 lb ground beef
3 tablespoons oil
3/4 cup unseasoned breadcrumbs
1/2 teaspoon dried thyme
1 teaspoon curry powder
salt and pepper
1/2 cup water

Steps:

  • To prepare pastry:.
  • sift together flour, curry powder, salt and then cut in the shortning until it resembles small peas. Add enough ice water to hold dough together, wrap in plastic and refridgerate 12 hours.
  • To make filling:.
  • Finely chop the onions and chile pepper, then mix thoroughly with the ground beef. Heat oil in a skillet and cook meat until browned, about 10 minutes. Stir in breadcrumbs, thyme, curry powder, salt and pepper.
  • Mix the filling well and then add 1/2 cup of water. Cover and simmer about 30 minutes. Cool.
  • Take dough out of fridge about 15 minutes before using. Roll out to 1/4 inch thickness and using a saucer to measure, cut into 4 inch circles. Sprinkle a little flour on each circle4 before stacking and cover stack with damp cloth.
  • Preheat oven to 400. Setting out first pastry circle top with 1/12th the filling to cover half of it Fold over the other half and seal edges by pressing with a fork. Repeat with remaining. Bake 30 minutes or until golden brown.

Flour for rolling out the dough
2 egg yolks, beaten with 1 teaspoon of rum
1 1/2 teaspoons salt
4 cups all-purpose flour
2 teaspoons dried turmeric or annatto
2 teaspoons salt
8 tablespoons vegetable shortening
4 ounces (1 stick) unsalted butter, cold
1/2 cup plus 2 tablespoons cold water
2 tablespoons vegetable oil or butter
1 large onion, finely chopped (1 1/2 cups chopped)
6 cloves garlic, minced
1 tablespoon finely chopped fresh ginger
1 pound ground beef
1/4 teaspoon ground turmeric or annatto
3/4 teaspoon ground cumin
3/4 teaspoon ground allspice
1/2 teaspoon ground cardamom
1 scotch bonnet pepper, seeded and finely chopped, optional
2 sprigs fresh thyme, finely chopped
3 scallions, finely chopped
1 tablespoon finely chopped parsley
1 pound ripe tomatoes, peeled and finely chopped

Steps:

  • For the pastry: Sift the flour, turmeric, and salt into a large bowl. Using your fingers, two knives, or a pastry blender, cut in the shortening and butter until mixture resembles coarse crumbs. Working quickly, add only enough water to form a firm dough. Do not overwork pastry. Form dough into a disc, wrap in plastic, and refrigerate for at least 1 1/2 hours or overnight.
  • In a large skillet, heat the oil until hot but not smoking. Add the onion and cook until softened, about 4 minutes. Add the garlic and ginger and cook for 1 minute. Add the ground beef, turmeric, cumin, allspice, cardamom, hot peppers, and thyme and cook until the beef is browned and spices are fragrant, about 10 minutes. Add the scallions, parsley, tomatoes, and stock and simmer for about 25 minutes, until the flavors have come together and almost all of the liquid has evaporated. Season, to taste, with salt and pepper, remove from the heat and stir in the rum. Set aside to cool before assembling the patties.
  • Preheat the oven to 400 degrees F.
  • On a lightly floured surface, roll out pastry and cut into circles about 6 to 7 inches in diameter. Spoon a scant 1/4 cup of the cooled filling onto the center of one side of each circle, and lightly brush the edges of the circle with a little of the beaten egg yolk mixture. Fold the other half of the pastry over so that the edges meet, and use a fork to crimp the edges together. Lightly brush the top of each patty with a little of the beaten egg yolk mixture. Place the patties on parchment-lined baking sheets and bake until golden brown, about 30 minutes. Serve immediately.

1 1/2 cups minced onion
1/2 cup water
1 pound lean lamb or beef or a mixture of both, ground fine
1 large potato, peeled and grated
1/2 cup fresh bread crumbs
2 eggs, lightly beaten
1 tablespoon aged red-wine vinegar, or more to taste
1/4 cup chopped flat-leaf parsley
1 tablespoon ground cumin
Sea salt and freshly ground black pepper to taste
All-purpose flour for dredging
Olive oil for frying or baking
Juice of 1 large lemon

Steps:

  • Combine the onion and water in a small saucepan, bring to a boil and simmer until liquid has evaporated, about 6 minutes. Combine the onion, meat, potato, bread crumbs, eggs, vinegar, parsley, cumin and a generous amount of salt and pepper in a large bowl. With your hands or a wooden spoon, mix until blended well. Add additional vinegar, salt and pepper to taste; the mixture should be highly flavored. Cover and refrigerate for 1 hour.
  • Moisten your hands with cold water. Form the meat mixture into 3/4-inch balls, flattening each slightly between your palms, and lightly dredge with flour.
  • To fry, pour 1/4 inch of olive oil into a heavy skillet over medium-low heat. When the oil is hot but not smoking, add the first batch of patties; they should fit comfortably in a single layer. Fry until golden brown on both sides and cooked through. Drain between two layers of paper towels. Repeat with the remainder. If you prefer to bake the patties instead of frying them, heat the oven to 325 degrees, and warm two or more heavy baking sheets. Brush the sheets with olive oil, and arrange the patties 1 inch apart. Lightly brush the patties with olive oil, and bake 20 to 25 minutes, turning once. Drain between two layers of paper towels.
  • To serve, arrange the patties on a platter; sprinkle with lemon juice.

1 brotchen (german rolls - or you may substitute it with 2 slices of white bread)
2 onions
1 lb hamburger
1 egg
salt, pepper, paprika to taste
1/4 c oil

  • 1. In a small bowl, soak the roll or bread in cold water. Peel the onion and dice it fine.

1 cup instant potato flakes
4 tablespoons powdered milk

Steps:

  • Preheat oven to 350.
  • Puree the meat and carrots in a food processor until smooth.
  • Thoroughly mix all the ingredients together.
  • Roll into small balls, press into patties, and bake for 15 minutes or until firm.
  • The patties will keep for 2 weeks in the refrigerator. Freezing is not recommended.

2 small potatoes, diced and cooked
1/2 lb lean ground beef (I use extra lean)
1/4 cup frozen mixed vegetables, cooked (I use the peas, carrots and corn mix)
1 onion, diced
1/2 cup mixed red and green sweet pepper, diced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 beef bouillon cube, cube
1/2 cup butter, chilled, (for flakier crust use 1/4 cup chilled lard, and 1/4 cup chilled butter)
1 1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
4 -6 tablespoons ice water
1 egg, beaten (for brushing exterior of meat pies)

Steps:

  • Mix all spices, diced bell peppers and diced onion, with ground meat thoroughly, and brown the meat in 1 teaspoon of olive oil in a skillet until meat is cooked (about 10 minutes).
  • Once ground beef is cooked, add the diced cooked potatoes and heat for 5 minutes.
  • Taste meat mixture and adjust amount of spices according to taste.
  • To make dough: Sift together dry ingredients and cut the butter into the dry ingredients with a fork or pastry cutter until mixture is crumbly.
  • While mixing with a wooden spoon, add water a tablespoon at a time until dough holds together in a ball(you may need more or less water than stated depending on humidity of your flour)
  • (If the dough crumbles, add a little more water by drops until the particles adhere).
  • When dough comes together into a ball, lightly flour your work surface (counter top or cutting board) and roll out the dough until 1/8 inch thick.
  • Cut out 6-8 inch circles (while working with dough, if dough becomes sticky or too soft put in refridgerator for 10 minutes to cool).
  • Place two teaspoons of meat stuffing in ceter of pastry cut outs.
  • Moisten the edges of the dough with water and fold the top half of the dough circle over the filling (into a half circle) and pinch edges together with a fork to seal.
  • Once all patties are formed, lightly brush the tops with beaten egg.
  • Bake on a lightly greased cookie sheet at 350 degrees for 35 minutes or until golden brown.

425 g pineapple chunks including juice
2 spring onions

Steps:

  • shape sausage meat into patties and place into pan with a little olive oil. Fry untill browned. On raw side sprinkle over combined flour and curry powder. Add to pan contents of pineapple tin and soy sauce then turn patties over.Cook untill patties are cooked through on low heat with lid on pan . 8 minutes approximately. cut spring onions finely and sprinkle over top of patties. Serve with mashed potatoes and vegetables.

Steps:

  • Peel and thickly slice the potatoes. Cook them in boiling, salted water for 10 minutes, until soft. Drain them and mash well.
  • Peel and finely chop or grate the onion. Chop the luncheon meat.
  • Mix together the potato, onion, luncheon meat, and bind together with the well-beaten egg, adding sufficient egg to hold it all together. Season with the salt, pepper, and herbs. Form the mixture into 3-4 equal portions. Shape each into a ball and then flatten to form 'beefburger' shapes about 3/4in (2cm) thick.
  • Heat the oil and butter in a frying pan, and fry over a moderate heat for 3-4 minutes, turning to cook both sides, until crisp and golden brown. Serve with fresh or fried tomatoes and/or a couple of fried eggs, if you're really hungry.

2 lb ground beef......then minced.
2 slice bread, your choice......soak in water for 10 minutes !
1 large egg........beaten
1 large lemon........sliced.for serving
1 Tbsp mint ..... dried
1 medium onion....grated and minced
Tbsp oregano....., dried
4-5 sprig(s) fresh parsley..... chopped to taste
1 pinch black pepper
1 pinch salt........to taste
2 Tbsp thyme....., dried

Steps:

  • 1. Gather your spices. Chop and mince the onion. Set aside
  • 2. Cover 2 slices of bread with water. Let set for 10 minutes With your hands squeeze all the water out that you can. Discard the crusts. Set this mass in a strainer to drip while you prepare the next step.
  • 3. In a large bowl mix with your clean wet hands combine the meat, onions, spices, parsley, salt & pepper and the bread mixture. You can use bread of your choice. I used Dill Rye bread.
  • 4. Now add the beaten egg. Again mix very well with your hands. Let this mixture set for 1/2 hour.
  • 5. You can broil the patties, or cook on the outside grill, even fry gently.. Do not let them burn or burn!!!
  • 6. Serve on a platter, with cut lemons, and a little fresh parsley. For a dinner I like yellow rice, fresh tomatoes and cooked spinach to round out the meal. Don't forget the ozo!! OPA! now enjoy!
