1 (16 ounce) package lasagna noodles
4 cups ricotta cheese
¼ cup grated Parmesan cheese
4 eggs
salt and pepper to taste
1 teaspoon olive oil
3 cloves garlic, minced
1 (32 ounce) jar spaghetti sauce
1 teaspoon Italian seasoning
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay lasagna flat on foil to cool.
  • In a medium bowl, combine ricotta, Parmesan, eggs, salt and pepper; mix well.
  • In a medium saucepan, heat oil over medium heat and saute garlic for 2 minutes; stir in spaghetti sauce and Italian seasoning. Heat sauce until warmed through, stirring occasionally, 2 to 5 minutes.
  • Spread 1/2 cup of sauce in the bottom of a 9x13 baking dish. Cover with a layer of noodles. Spread half the ricotta mixture over noodles; top with another noodle layer. Pour 1 1/2 cups of sauce over noodles, and spread the remaining ricotta over the sauce. Top with remaining noodles and sauce and sprinkle mozzarella over all. Cover with greased foil.

12 whole wheat lasagna noodles
1 pound lean ground beef
2 cloves garlic, chopped
½ teaspoon garlic powder
1 teaspoon dried oregano, or to taste
salt and ground black pepper to taste
1 (16 ounce) package cottage cheese
2 eggs
½ cup shredded Parmesan cheese
1 ½ (25 ounce) jars tomato-basil pasta sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, add the lasagna noodles a few at a time, and return to a boil. This is a very flavorful and diverse lasagna that took a bit of trial and error searching for what cheese I could use. I've made this for family and friends and all enjoyed very much, I recommend serving this with garlic bread and your favorite wine! NOTE: if not a sausage fan use beef or no meat at all

16 ounces ricotta cheese
3 cups mozzarella cheese (2% or skim)
1/4 cup provolone cheese
1/8 cup muenster cheese
1/4 cup parmesan cheese
1/4 cup romano cheese
1/8 cup feta (finely crumbled)
2 ounces goat cheese
2 large eggs
1 teaspoon white pepper
3 tablespoons dried parsley
5 cups pasta sauce (homemade or your fav brand)
1/2 portabella mushroom (finely diced)
1/2 lb Italian sausage (really depends on how meaty you like it)
1 lb lasagna noodle (boiled)
1/2 cup mozzarella cheese (not part of cheese mixture)

Steps:

  • Line your dish lightly with oil (I like to use an extra virgin olive.
  • Mix together the ricotta, mozzarella, provolone, muenster, parmesan, romano, feta, goat cheese, eggs, pepper, and parsley well in a large mixing bowl (being careful, cheese tends to fly out at you).
  • Stir your sauce ingredients together in mixing bowl.
  • Lay strips of pasta across dish parallel until layer is covered.
  • Paste out the cheese mixture on top of pasta evenly.
  • Repeat 5 with sauce on top of cheese mixture.
  • Lightly sprinkle mozzarella on top of pasta (this helps hold the pasta together.
  • Lay down another layer of pasta and repeat steps 5-8 until you reach the top of your dish.
  • Sprinkle a little mozzarella and parmesan on the last layer of pasta (for looks).
  • Cover with aluminum foil (this prevents the top from drying out--unless you like that).
  • Preheat oven to 315°F and cook for 1 hour.

1 tablespoon olive oil
1 cup chopped onion
4 cloves garlic, minced
3 pounds lean ground beef or ground turkey
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 teaspoon crushed red pepper flakes
3 (28-ounce) cans diced tomatoes
1 (14-ounce) can tomato sauce
4 cups ricotta cheese (regular or part-skim)
8 ounces grated mozzarella cheese (regular or part-skim), divided
1 egg
1/2 teaspoon ground black pepper
12 uncooked lasagna noodles
1/4 cup grated Parmesan or Romano

Steps:

  • For the Lasagna Filling:
  • Preheat oven to 350 degrees F.
  • Heat the oil in a large stock pot over medium heat. Add onion and garlic and saute 3 minutes, until soft. Add, beef and cook 5 to 7 minutes, until browned all over, breaking up the meat as it cooks. Stir in basil, oregano and red pepper flakes.

  • Pour 1 cup of the meat sauce in the bottom of a 13 by 9-inch lasagna pan. Arrange 4 UNCOOKED lasagna noodles on top of sauce, overlapping noodles slightly to cover the bottom. Spoon half of the cheese mixture over noodles. Top with 1 1/2 cups of meat sauce and 4 more noodles. Top second layer of noodles with remaining cheese mixture, 1 1/2 cups of meat sauce and 4 more noodles. Top noodles with 1 1/2 cups of meat sauce and remaining mozzarella cheese. Top with Parmesan cheese.
  • Refrigerate or freeze the remaining sauce.
  • Cover with foil and bake 45 minutes. Uncover and bake 15 more minutes, until top is golden and bubbly. Let stand 5 minutes before slicing.

I have tried different combinations of meat, cheese and sauce, and this is the one my husband and I both love the most. Any other lasagna just doesn't compare. Occasionally I have had to use just ground beef, or just mozzarella, depending on what I had, but they just don't turn out as yummy as this combination.

1 lb ground meat (I use the mix of beef, pork, and veal)
2 (680 ml) cans pasta sauce (I use Primo, one can of garlic and herb, one can of romano cheese and basil)
1 (380 g) package of kraft mozza-cheddar grated cheese
grated parmesan cheese, to preference
12 lasagna noodles (I use PC Blue Menu, whole wheat noodles)

Steps:

  • Brown the meat, and drain.
  • Add both cans of sauce to the meat mixture, and heat on low, covered, making sure to stir every few minutes.
  • While the sauce is heating, boil the noodles according to package directions, and preheat the oven to 350 degrees.
  • When the noodles are ready, drain them and run cold water over them so that they are not too hot to touch.
  • Put a little bit of the meat sauce on the bottom of a 9 x 13 baking dish.
  • Do 2 layers of: 4 noodles, meat sauce, parmesan cheese, mozza-cheddar cheese.
  • Final layer is 4 noodles, meat sauce, and parmesan cheese (mozza-cheddar layer gets added later, so it won't burn).
  • Bake in oven for 20-25 minutes.
  • Take out of the oven and put a final layer of mozza-cheddar cheese on top; bake another 10 minutes or until cheese is bubbly and just starting to brown, don't let it get overdone.
  • Let sit for 10 minutes before cutting.

4 medium zucchini, sliced lengthwise and cut into 1/2-inch slices
1 tablespoon salt, or more to taste
1 tablespoon olive oil, or more as needed
½ medium onion, diced
4 cloves garlic, minced
1 pound ground beef
1 medium potato, diced
1 large red bell pepper, diced
1 (26 ounce) jar marinara sauce
1 (8 ounce) package mozzarella cheese, grated

Steps:

  • Salt zucchini slices on a plate and let sit for 10 to 15 minutes while you dice the rest of the ingredients.
