MACARONI SALAD FOR A CROWD

Macaroni Salad for a Crowd image

Basic and super easy macaroni salad that I make for family gatherings. I make mine with dill relish but you could change it if you prefer the sweet. Looks good and tastes even better the next day. The more you make it, the quicker you will get. Can be served right away, or make it ahead of time and keep it in the fridge.

Great for those hot summer nights when it's too hot to cook, this is a very versatile recipe. We like it served with crisp breadsticks. Best if made a day or two before serving but can be served after 3 hours of chilling. Amount of salt to use will depend on type of meat used.

Time 30m

Yield 6 servings

Number Of Ingredients 12

2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat-leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper

Steps:

  • In a large bowl, combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

Tips:

  • Use high-quality macaroni: Opt for a good quality macaroni that holds its shape well when cooked. Durum wheat pasta is a great choice.
  • Cook the macaroni al dente: Make sure to cook the macaroni according to the package instructions, but slightly undercook it so that it retains a slight bite.
  • Cool the macaroni quickly: Immediately after cooking, drain the macaroni and rinse it under cold water to stop the cooking process and prevent it from becoming mushy.
  • Use a variety of vegetables: Don't be afraid to experiment with different vegetables in your macaroni salad. Some popular choices include celery, carrots, red onion, bell peppers, and broccoli.
  • Choose the right dressing: The dressing is what brings all the flavors of macaroni salad together. You can use a simple vinaigrette, a creamy dressing, or a tangy dressing, depending on your preference.
  • Add some protein: If you want to make your macaroni salad more filling, you can add some protein, such as cooked chicken, ham, or shrimp.
  • Garnish with fresh herbs: Before serving, sprinkle some fresh herbs, such as parsley, chives, or basil, on top of the macaroni salad for an extra burst of flavor.

Macaroni salad is a versatile and delicious dish that can be enjoyed as a main course or a side dish. It's perfect for potlucks, picnics, and summer gatherings.
