ME-MAW'S KARO PECAN PIE

Me-maw's Karo Pecan Pie image

This recipe is from my late Louisiana grandmother, saved in our handwritten family cookbook. It's the only pecan pie recipe I've ever used (or probably will ever use)--it's just perfect. For a real treat, grab a piece while it's still gooey and warm from the oven (or reheat it in the microwave!) and top it with a scoop of ice cream (vanilla bean, French vanilla and butter pecan are all heavenly choices).

Tips:

  • For a richer, more decadent pie, use dark Karo syrup instead of light Karo syrup.
  • If you don't have a pie plate, you can use a 9-inch springform pan.
  • To prevent the pie crust from getting soggy, pre-bake it for 10 minutes before filling it.
  • If you don't have time to make your own pie crust, you can use a store-bought one.
  • To make sure the pecans are evenly distributed, toss them with the Karo syrup before adding them to the pie filling.
  • Bake the pie until the filling is set and the crust is golden brown.
  • Let the pie cool for at least 1 hour before serving.
