4 tablespoons of skim milk
½ pound sausage
½ tablespoon reconstituted onion
1 tablespoon petite diced tomatoes, diced again
1 tablespoon green chiles
4 tortillas
4 slices American cheese
Salsa or picante sauce as garnish

Steps:

  • Combine eggs and skim milk in a small bowl.
  • Cook sausage at medium-low until cooked, without letting it turn brown.
  • Add vegetables to cooked sausage.
  • Stir and simmer for 2 minutes to warm, then separate into quarters.

1 tsp. Olive Oil
1/2 cup yellow onion diced
1/4 cup fresh tomatoes diced
1 tbsp. green chilies
4 six-inch tortillas
4 eggs
8 American Cheese slices
1/2 cup salsa

Steps:

  • Crumble and fry pork sausage, stir and separate meat so it will fry in small little pieces. Remove from heat drain excess grease.
  • Add a bit of olive oil to a pan and add onion, green chilies, and tomatoes, cook until veggies are soft (about 5 minutes) and add the sausages again.

Sometimes when I don't have fresh tomatoes I substitute a little salsa or some drained Rotel tomatoes taste the best. If you go with the Rotel option, you can omit the diced green chilies that are called for in the recipe.

1 medium tomatoes, diced
