These mushrooms are the quintessential topping for all types of steak. Also excellent over baked potatoes. I have people calling me and asking me for the recipe even years after I have made them for them. They are that good!!

Steps:
- In a large skillet, heat the oil over high heat. Add the mushrooms. Do not move the mushrooms until they have caramelized on the bottom. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss them and continue to cook for about 5 minutes.
- Add the butter. Cook and toss for 5 minutes, until beautifully browned.
- Season with salt and add the garlic. Saute another 2 minutes, and add the thyme, lemon juice, and white wine. Cook to evaporate the liquid.
- Toss in the parsley and serve immediately.
'MAZING MUSHROOMS
This has been one of my recipes for ages. I got it from a magazine, but I've no idea which one. It is very simple to make, and looks very impressive as part of an antipasto platter. Cooking time is refrigeration time. I prefer to use field mushrooms because they have more flavour, but it has a more dramatic visual effect if you use the buttons. They also soak up a lot of flavour from the dressing. Since the dressing is so simple, it relies on good ingredients. Please use fresh everything for optimal results.

Steps:
- If you are using button mushrooms, leave them whole.
- Slice field mushrooms fairly thinly.
- In a serving bowl, combine all of the ingredients and toss to coat the mushrooms well.
- At this point taste the dressing, it may need more lemon, or oil.
- It really depends on your personal preference, however it should be slightly tart.
- Refrigerate for at least 4 hours, tossing occasionally.
Tips:
- Choose the right type of mushrooms: Use firm, meaty mushrooms like portobello or cremini.
- Clean the mushrooms properly: Wipe the mushrooms with a damp cloth or paper towel to remove any dirt.
- Marinate the mushrooms: Marinating the mushrooms in a mixture of oil, herbs, and spices enhances their flavor.
- Cook the mushrooms over high heat: High heat helps to sear the mushrooms and prevent them from becoming rubbery.
- Don't overcrowd the pan: Cooking the mushrooms in batches prevents them from steaming instead of searing.
- Season the mushrooms to taste: Add salt, pepper, and other seasonings to taste before serving.
- Serve the mushrooms immediately: Mushrooms are best served hot and fresh out of the pan.
Conclusion:
