IOWA MAYTAG TART (BLUE CHEESE TART)

Iowa Maytag Tart (Blue Cheese Tart) image

I buy my blue cheese rounds from Maytag, the same company that makes washing machines. They have caves in Iowa that they mature the cheese in. This recipe came in a booklet that arrived with my first round of blue cheese. It is so good.

  • Season Generously: Don't be shy with the seasonings. The potatoes, blue cheese, and herbs all benefit from a generous amount of salt and pepper.
  • Don't Overcook the Potatoes: The potatoes should be tender but still slightly firm. Overcooking them will make them mushy and ruin the texture of the tartlets.
  • Use a Good Quality Blue Cheese: The blue cheese is a key ingredient in these tartlets, so make sure to use a good quality one. Look for a blue cheese that is creamy and flavorful, with a distinct blue vein running through it.
  • Handle the Tartlets Carefully: The tartlets can be delicate, so handle them carefully when transferring them from the baking dish to the serving plate.
