Yield 6

Number Of Ingredients 11

1 (4 pound) whole chicken
1 medium lemon
1 small onion, quartered
1 medium head garlic, halved lengthwise
½ cup mayonnaise
1 tablespoon vinegar
1 tablespoon Honey, strained or extracted
2 teaspoons Worcestershire sauce
¼ teaspoon ground cayenne pepper
1 ½ teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Set a roasting rack inside a rimmed baking sheet. Pat chicken dry with paper towels.
  • Zest 1 teaspoon lemon zest into a small bowl. Quarter remaining lemon and place pieces inside chicken cavity along with onion and garlic.
  • Add mayonnaise, vinegar, honey, Worcestershire, and cayenne to the lemon zest; mix to combine. Rub mayonnaise mixture evenly all over the chicken and underneath the skin over the breast. Sprinkle chicken evenly with salt and pepper.
  • Roast in the preheated oven until no longer pink at the bone and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Tent with foil halfway through cooking if too much browning occurs before internal temperature is reached. Let stand for 10 minutes before serving.

Time 40m

Number Of Ingredients 10

1/2 c mayonnaise
2 lemons, zest finely grated
2 tsp paprika
1 tsp ground black pepper
1 tsp cayenne pepper
1/2 tsp adobo all purpose seasoning
1/2 tsp badia complete seasoning
4 (8 oz) boneless, skinless chicken breasts
basil, dried (optional)
oregano, dried (optional)

Steps:

  • 1. Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.
  • 2. In a small bowl, whisk together the mayonnaise, lemon zest, paprika, pepper, adobo, complete seasoning, and cayenne.
  • 3. Season the chicken with Adobo seasoning and Badia Complete Seasoning to taste.
  • 4. Arrange the chicken on the prepared baking sheet.
  • 5. Slather the mayonnaise mixture over the chicken.(Optional: sprinkle basil and oregano on top, adds extra flavor!)
  • 6. Bake until the juices run clear when the chicken is pricked with a fork, about 20-25 minutes.
  • 7. Transfer the chicken to a serving platter and serve hot.

Tips:

  • Prep the Chicken: Rinse the chicken inside and out, then pat it dry with paper towels. This helps the marinade penetrate the meat evenly and prevents splatter when roasting.
  • Make the Marinade: Whisk the mayonnaise, lemon juice, garlic, paprika, salt, and pepper in a small bowl until smooth. The mayonnaise not only adds flavor but also helps keep the chicken moist during roasting.
  • Marinate the Chicken: Place the chicken in a large bowl or resealable plastic bag and pour the marinade over it. Massage the marinade into the chicken, making sure it's evenly coated. Cover the bowl or seal the bag and refrigerate for at least 1 hour, or up to overnight.
  • Roast the Chicken: Preheat the oven to 425°F (220°C). Place the chicken breast-side up in a roasting pan and pour any remaining marinade over it. Roast the chicken for 15-20 minutes, then reduce the heat to 350°F (175°C) and continue roasting for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
  • Use a Meat Thermometer: Insert an instant-read meat thermometer into the thickest part of the chicken to ensure it's cooked through. The internal temperature should read 165°F (74°C) for safe consumption.

Conclusion:

Mayo-roasted chicken is an easy and flavorful dish that's perfect for a weeknight meal or a special occasion. The mayonnaise-based marinade helps keep the chicken moist and tender, while the paprika and lemon juice add a zesty flavor. Serve with roasted vegetables, mashed potatoes, or a simple salad for a complete meal. With its crispy skin, juicy meat, and tangy flavor, this dish is sure to impress your family and friends.
