This recipe came from my cajun grandmother, Hazel Wiltz Forrest. Everytime I taste it I think of her and her wonderful cooking.

Number Of Ingredients 6

1 lb ground beef
1 medium bell pepper - chopped
3 cloves garlic - chopped
1 medium white onion
1 c rice - cooked
3 medium eggplants

Steps:

  • 1. Brown ground beef and add onion and bell pepper as you brown it. Season with salt and pepper to taste.
  • 2. Boil whole eggplants until tender.
  • 3. When eggplants are tender, peel and cut into bite size chunks. ( I like to remove the seeds but this is optional)
  • 4. Add eggplant to meat mixture and add rice. Simmer another 10 minutes. Add salt, pepper and red pepper to taste.
  • 5. *Hint - If you prefer using bread to rice, use 3 slices stale or toasted white bread. Wet bread and squeeze out water. Add bread to meat mixture and cook 10 minutes.

3 large eggplants, peeled & cubed
1 1/2 lbs ground beef meat
1/4 cup parsley
Salt & pepper to taste
1 large onion, chopped
1 bell pepper, chopped
1/4 cup onion tops
3 cups cooked rice

Steps:

  • Place peeled eggplant in cold, salty water. Set rice to cook.
  • Brown ground meat in a medium size pot. After the meat is browned and drained, add the onion and bell pepper with the cooked, ground meat and cook for 5 minutes or until the onion is soft and translucent..
  • Add the eggplant, salt, pepper, parsley and onion tops to the browned beef and cook for 10 minutes or more until eggplant is soft and tender.
  • Add the cooked rice to the meat and eggplant mixture and serve!
  • If you prefer and for a taste variety, cornbread may be used in place of the rice,

1 medium eggplant
1 large egg
Abt 1/2 c flour
1 Tbsp sugar
2 tsp baking powder
pinch salt
pepper to taste

Steps:

  • 1. Peel and cube eggplant.
  • 2. Cook in boiling, salted water until tender.
  • 3. Drain well and mash.
  • 4. Beat eggs.
  • 5. Blend in flour, sugar, baking powder, eggplant, salt and pepper.
  • 6. Drop by spoonful into cooking oil. Brown on both sides.

4 cups day-old breadcrumbs
4 cups crumbled cornbread
4 cups crumbled biscuits
1 cup finely chopped yellow onion
1 cup finely chopped celery
1/4 cup chopped green onion
1/4 cup finely chopped fresh parsley
1 1/2 teaspoons sage
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup melted butter
2 eggs, slightly beaten
2 -4 cups chicken broth (or more if needed)

Steps:

  • Pre-heat oven to 350F.
  • In a very large mixing bowl, combine bread crumbs, crumbled cornbread, crumbled biscuits, yellow onions, celery, green onions, fresh parsley, sage, salt and pepper.
  • Toss well.
  • Add melted butter and eggs; mix.
  • Add chicken broth, a little at a time, mixing lightly, but well.
  • Add enough broth to make mixture extra moist.
  • Place mixture into a well-greased baking dish.
  • Bake about 45 minutes or until top is golden brown.
  • ~NOTE~This can be made ahead of time by mixing everything together, placing it in the well-greased baking dish, covering with foil, and refrigerating.
  • To bake, remove from refrigerator and let sit at room temperature for about 30 minutes.
  • Then, remove foil and bake for about 45 minutes.

A recipe my family grew up on that our mom made, simply ingredients and cooking. Great as a meal with sliced tomatoes or a side dish. **My mom would also slice bell peppers in half, remove seeds and rub a bit of oil on outside then mound this eggplant dressing inside, place stuffed bell pepper in 9 x 13 dish with a just enough water to cover bottom and bake at 350 for 25-30 minutes to be served as a side dish. ***You can also just cook your eggplant down with the seasonings S,P Garlic Powder, onion and bell pepper. Cool then freeze in smaller packages with a good seal. When ready to use take out defrost add cooked meat and rice and heat thoroughly.

1 medium diced onion
1 medium diced bell pepper

  • 1. Cook ground hamburger meat-use a 92/8 mixture drain any fat, add garlic powder, S & P, and chopped bell pepper, and onion cook on low till onion wilted.
  • 2. Peel eggplant, slice and cut each slice into 1" cubes.
  • 3. Add eggplant to meat mixture, turn up heat, put lid on so eggplant will steam. Each time you check mash down eggplant with back of spoon. Continue until eggplant is tender and mixes in with meat mixture. This takes about 45 minutes.

  • 5. Stir in cooked rice to mixture and heat so its hot through and through.
  • * Cooking time for recipe maybe a little bit more.
