This is a recipe that we used growing up on Maui. We mostly used it to marinade chicken or beef short rips and then grill the. Because of the sugar content, like barbecue sauce, be careful because it burns easily. I always cook on the grill using indirect heat.

2 cups soy sauce
1 cup brown sugar
2 fresh garlic cloves
3 tablespoons fresh ginger
1 tablespoon sesame oil
1 teaspoon sesame seeds
1 scallion

Steps:

  • Grate ginger root, crush garlic, and dice scallion. Mix all ingredients together until sugar dissolves pretty well.
  • Marinade your choice of meat (I use a ziplock bag) for at least 4 hours, but better overnight.
  • Grill and enjoy! Serve "local style" with sticky rice and macaroni salad! Note: preparation time does not include marinating time!

3 pounds beef short ribs, 3/8-inch cut
1/2 cup sugar
1/4 cup soy sauce
2 cloves garlic, grated
1 tablespoon sweet chili sauce
1 teaspoon grated fresh ginger
1/2 orange
Cooked rice, for serving
Green onions, thinly sliced, for garnish
Sesame seeds, for garnish

Steps:

  • Place the beef short ribs in a re-sealable gallon bag. Add the sugar, soy sauce, garlic, sweet chili sauce, ginger and 1/2 cup water to the bag. Squeeze half of the orange in the bag, and add the remaining orange rind. Marinate the short ribs in the refrigerator for at least 12 hours, preferably 24 hours, so the juices and flavors can soak into the short ribs.
  • Preheat a grill to medium heat.
  • Cook the short ribs until lightly charred on both sides, 4 to 6 minutes. Serve immediately with rice and garnish with sesame seeds and green onions.

3/4 cup chopped green pepper
1/2 cup cubed fresh pineapple

2 tablespoons honey
2 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons brown sugar
2 tablespoons sesame seeds
2 cloves minced garlic
1 (1 inch) piece fresh ginger, grated
¼ cup cold water
1 tablespoon cornstarch

Steps:

  • Stir soy sauce, honey, rice vinegar, sesame oil, brown sugar, sesame seeds, garlic, and ginger together in a small saucepan over medium-high heat.
