MIMI'S CURRIED HAWAIIAN CHICKEN SALAD
My mother Joyce, who my children call 'Mimi,' is a great Southern cook and has many legendary recipes. This is one of her crowd pleasers. She's been making this very traditional 'lady-like' chicken salad for as long as I can remember. It's best the day after making, and is colorful and fragrant and perfect for a summer supper -- or a ladies' luncheon!

This recipe is based on the marinade for these Hawaiian Chicken Skewers I shared a few weeks ago - see note 1 for how to REUSE the marinade for this recipe. Tips:
- Use fresh ingredients: Fresh, high-quality ingredients will make your Maui chicken salad more flavorful and enjoyable. Look for ripe avocados, crisp celery, and juicy pineapple.
- Choose the right chicken: You can use cooked chicken breast, thigh, or rotisserie chicken for this salad. If you're using raw chicken, be sure to cook it thoroughly before adding it to the salad.
- Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook it just until it is cooked through, then remove it from the heat.
- Use a variety of textures: The different textures in this salad, such as the creamy avocado, crunchy celery, and chewy pineapple, make it more interesting to eat.
- Add some spice: If you like a little bit of spice, you can add some chopped jalapeño or red pepper flakes to the salad.
- Garnish it up: Before serving, garnish your salad with some chopped green onions, cilantro, or parsley. This will add a pop of color and flavor.
Conclusion:
Maui chicken salad is a delicious and refreshing dish that is perfect for a summer lunch or dinner. It is easy to make and can be tailored to your own taste preferences. Experiment with different ingredients and seasonings to create a salad that you will love.
