4 large eggs, beaten with 1 tablespoon water
Large pinch fine sea salt, more to taste

Steps:

  • Under cool running water, rinse matzo sheets until they are quite wet. Set it aside and let sit to soften while you prepare the pan.
  • Place a large, preferably nonstick skillet over medium-high heat and add butter. Once it melts and the foam subsides, break matzo sheets into bite-size pieces and add to pan. Sauté matzo in butter until it browns all over, about 2 minutes.

2 tablespoons olive oil or unsalted butter
1 large shallot, finely chopped
Kosher salt and freshly ground black pepper
4 sheets matzo, broken into approximately 1-inch pieces
4 large eggs
Splash heavy cream
3 ounces fresh spinach, chopped
1/2 cup shredded mozzarella
Hot sauce and ketchup, for serving

Steps:

  • Heat the oil or butter in a large skillet over medium heat. Add the shallot and a pinch of salt and pepper. Cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Meanwhile, fill a medium bowl with cold water and submerge the matzo. Soak for 1 minute, then drain and set aside. In a separate medium bowl, whisk together the eggs and heavy cream until homogenous. Stir in the matzo and set aside.
  • Add the spinach to the shallots, one handful at a time, stirring until wilted. Add another pinch of salt. Pour in the egg mixture and cook until the bottom is set. Use a spatula to gently pull the bottom cooked parts to the sides of the skillet to make space for more of the mixture to cook. Add the cheese. Repeat this gentle pulling process until a majority of the mixture is set, 1 to 2 more times, then turn off the heat. 5 tablespoons unsalted butter
2 Granny Smith apples, peeled and cut into 1/2-inch dice
5 tablespoons sugar
Juice of 1/2 lemon
1/2 teaspoon ground cinnamon
1/2 cup golden or dark raisins
8 sheets matzo
3 cups boiling water
4 large eggs
Pinch of coarse salt

Steps:

  • Preheat the oven to 350 degrees. Place pecans in a single layer on a rimmed baking sheet; toast in oven until they are light golden and aromatic, about 7 minutes. Shake pan halfway through baking to make sure the nuts toast evenly. Set aside to cool.
  • In a medium saute pan set over medium-high heat, melt 1 tablespoon butter. Add apples; cook until lightly browned, about 5 minutes. Sprinkle 3 tablespoons sugar over apples; cook, stirring occasionally, until sugar has dissolved and caramelized, about 8 minutes. Stir in lemon juice, cinnamon, and raisins.   • Beat the eggs (like you're about to make scrambled eggs) in a medium-size bowl, and set aside.

I didn't know about matzo brei, that wonderful breakfast dish consisting of matzo and beaten eggs cooked in a lot of butter, until I started dating my now-husband (who is Jewish), in the mid-70s. His mom, Esther, made it for me and I thought it was absolutely delicious. I always wondered if you could build on matzo brei, treat it much like you would treat an omelet or scrambled eggs and throw in any old ingredient. So I tried it for this recipe and it worked surprisingly well. Boursin, an herb-flavored spreadable cheese which I have fond memories of from my childhood (it was very gourmet in the 60s), is a tad expensive, which is why I am offering a few alternatives. After you make this once, let your imagination go wild and throw in your favorite ingredients such as sauteed mushrooms, onions or even broccoli.
