CRABMEAT BISQUE MADE EASY

Crabmeat Bisque Made Easy image

This is not a thick soup, yet it is creamy and so smooth to the palette. The aroma when cooking makes you want some before the potatoes are soft. I have made modifications due to allergy to corn (such as rice flour). I allow mine to slow-simmer with lid slightly ajar. Stir often so the film does not form on top. I have doubled my batch and still never have any for the freezer.

3 tablespoons all-purpose flour
1/4 cup brandy
3 1/2 cups reduced-sodium chicken broth
1/4 cup tomato paste
1 russet potato, peeled and diced
1/2 pound small shrimp, peeled and deveined
12 steamed clams, shells discarded, clams chopped
1/2 cup heavy cream
1 tablespoon freshly chopped dill leaves
Rolls, for serving, optional

Steps:

  • Heat oil and butter together in a large saucepan. Add roasted garlic and leeks and saute 3 minutes, until leeks are soft. Add flour and stir to coat. Add brandy and simmer 2 minutes. Add broth, tomato paste and potato and bring to a boil. Boil 6 minutes, until potatoes are fork-tender. Add shrimp and clams and simmer 1 minute to heat through. Add cream and dill and simmer 1 minute. Serve with rolls, if desired.

Tips:

  • Use Fresh Seafood: The key to a flavorful bisque is using fresh crab and clams. If you can't find fresh seafood, frozen is a good alternative.
  • Don't Overcook the Seafood: Seafood cooks quickly, so be careful not to overcook it. Overcooked seafood will become tough and rubbery.
  • Use a Variety of Vegetables: A variety of vegetables adds flavor and texture to the bisque. Feel free to experiment with different vegetables, such as carrots, celery, onions, leeks, and fennel.
  • Use a Good Quality Stock: A good quality stock is essential for a flavorful bisque. You can use store-bought or homemade stock. If you are using store-bought stock, look for a low-sodium option.
  • Season to Taste: Season the bisque to taste with salt and pepper. You can also add other seasonings, such as Old Bay seasoning, cayenne pepper, or paprika.
  • Serve with Crusty Bread or Crackers: Serve the bisque with crusty bread or crackers for dipping.
