3 pounds red skin potatoes, unpeeled and cut into 2" cubes
1/2 tablespoon + 1 teaspoon salt
2 garlic cloves, minced
6 tablespoons butter
1/2 cup milk ((whole or 2%))
1/2 cup heavy whipping cream
1/2 teaspoon black pepper
Optional garnish: fresh chopped chives

Pour in the second half and sprinkle with 1 teaspoon of salt and 1/2 teaspoon black pepper; mash until desired consistency. Careful not to over mix the potatoes, or they can become sticky like glue.

Tips:

  • Choosing the Right Potatoes: Select red-skinned potatoes that are firm and free of blemishes. They should be about 2 inches in diameter for even cooking.
  • Thoroughly Clean the Potatoes: Scrub the potatoes well under running water to remove any dirt or debris. This will help ensure the mashed potatoes are smooth and free of grit.
  • Boiling the Potatoes: Place the potatoes in a large pot filled with cold water. Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes.
  • Draining and Mashing: Drain the potatoes in a colander and allow them to steam dry for a few minutes. Return the potatoes to the pot and use a potato masher or ricer to mash them until smooth. Avoid over-mashing, as this can make the potatoes gluey.
  • Adding Flavor: For extra flavor, add ingredients such as butter, milk, sour cream, garlic, herbs, or cheese to the mashed potatoes. Season with salt and pepper to taste.
  • Serving Suggestions: Mashed red-skinned potatoes can be served as a side dish with roasted meats, grilled fish, or steamed vegetables. They can also be used as a base for potato cakes, gnocchi, or shepherd's pie.

Conclusion:

Mashed red-skinned potatoes are a comforting and versatile side dish that can be enjoyed for any occasion. With their creamy texture and mild flavor, they pair well with a variety of main courses and can be easily customized to your taste preferences. Whether you prefer them simple or loaded with your favorite toppings, mashed red-skinned potatoes are sure to be a hit at your next meal.
