I got this recipe from an old copy of Bon Appetit that I had kept and found all the recipes I've marked to try, and have I! This is really good if you like the combination of ingredients. I've also used red potatoes for this and can't wait for yellow fins to come in locally so I can try those with this recipe. Tips:

  • Use a variety of potatoes. Mixing different types of potatoes, such as Yukon Gold, Russet, and red potatoes, will give your mashed potatoes a more complex flavor and texture.
  • Cook the potatoes properly. Overcooked potatoes will be mushy, while undercooked potatoes will be hard. Cook the potatoes until they are tender but still hold their shape.
  • Drain the potatoes thoroughly. Any excess water will make your mashed potatoes watery and bland.
  • Use a potato ricer or food mill. This will give you the smoothest, creamiest mashed potatoes.
  • Add your favorite mix-ins. Cheese, spinach, bacon, and chives are all popular additions to mashed potatoes.
  • Don't overmix the potatoes. Overmixing will make your potatoes gluey.
  • Serve the potatoes hot. Mashed potatoes are best when served immediately after they are made.

Mashed potatoes with spinach and cheese are a delicious and versatile dish that can be served as a side dish or main course. With a few simple tips, you can make the perfect mashed potatoes every time. So next time you're looking for a comforting and satisfying meal, give this recipe a try!
