CHEESY LEFTOVER HAM AND MASHED POTATO CASSEROLE
This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

MASHED POTATOES WITH HAM
"Mashed Potatoes with Ham evolved from scalloped potatoes, which are tasty but time-consuming to bake. "I warmed up leftover mashed potatoes, then decided to throw in some ham to save a dish," Kathy explains. "The next time I made it, I added a cheese and crumb topping to give this casserole an appealing golden look."

COUNTRY HAM AND SMASHED-POTATO HOME FRIES
Steps:
- Place the potatoes in a large saucepan and add cold water to cover by 1 inch. Salt the water generously and bring to a boil over medium heat. Reduce the heat to medium-low and simmer until the potatoes are fork-tender, 7 to 10 minutes, depending on size. Drain and set aside.
- Meanwhile, heat 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium heat. Add the ham and saute, stirring occasionally, until crispy, about 4 minutes; transfer to a bowl. Add the onions and red peppers to the skillet and saute, stirring occasionally, until tender, 5 to 7 minutes; transfer to another bowl.
- While the vegetables are cooking, smash the boiled potatoes down by hand. Add the remaining tablespoon oil and the butter to the skillet. When the butter is foaming, add the potatoes in a single layer and sear until very golden brown and crispy, 2 to 4 minutes per side. Stir in the crispy ham, onion mixture and lemon zest. Add salt and pepper to taste. Serve immediately.
CRUNCHY POTATO BALLS
Cooking is not one of my favorite things to do, so I'm always looking for simple and tasty recipes to feed our growing family (three sons - 8,5 and 7 months). These potato balls make a good snack or appetizer (my two older boys love them with any meal!), and they're a good way to use up leftovers. In fact, I often find myself peeling a few extra potatoes just to make sure there will be leftovers. I've also substituted ground-up hot dogs or sausage for the ham.

INSTANT MASHED POTATO, HAM AND CHEESE CASSEROLE
Oh my gosh, this is the cheapest, quickest and tastiest main dish ever. We have this at least once a week. I like to brown my ham in butter before adding to casserole. It just makes the ham a little crisp. You will not be disappointed.

Tips:
- For the best mashed potatoes, use a russet potato. They have a high starch content, which makes them light and fluffy.
- Peel and cut the potatoes into even-sized pieces. This will help them cook evenly.
- Boil the potatoes in salted water until they are tender. Drain the potatoes well and return them to the pot.
- Mash the potatoes with a potato masher or a ricer. Do not overmix, or the potatoes will become gluey.
- Add butter, cream, and milk to the potatoes. Season with salt and pepper to taste.
- For crispy ham, bake it in the oven at 350 degrees Fahrenheit for 10-15 minutes per pound.
- To make the gravy, whisk together the pan drippings, chicken broth, and flour in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Serve the mashed potatoes and ham with the gravy.
Conclusion:
Mashed potatoes and ham is a classic comfort food dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With these tips, you can make the best mashed potatoes and ham that you have ever tasted.
