Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are ideal for mashed potato cookies, as they have a high starch content that helps to create a smooth and creamy texture.
  • Cook the potatoes properly: Be sure to cook the potatoes until they are very soft and easily mashed. This will help to ensure that your cookies have a smooth texture.
  • Use fresh coconut: Fresh coconut will give your cookies the best flavor. If you only have dried coconut on hand, be sure to toast it before using it to bring out its flavor.
  • Don't overmix the dough: Overmixing the dough will make your cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough for at least 30 minutes before baking will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies until they are golden brown: The cookies are done baking when they are golden brown around the edges and just set in the center.

Conclusion:

Mashed potato coconut cookies are a delicious and unique treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can create perfect mashed potato coconut cookies that will be enjoyed by everyone.
