2 pounds Yukon gold potatoes, peeled and quartered
12 tablespoons unsalted butter, at room temperature
1 1/2 cups half-and-half, warmed
Kosher salt
1 tablespoon extra-virgin olive oil

1/3 cup finely chopped fresh parsley
1 1/2 cups fresh, unseasoned breadcrumbs

RUTABAGA-POTATO MASH WITH BACON

Rutabaga-Potato Mash With Bacon image

For the food historian Jessica B. Harris, humble rutabagas laced with rich, smoky bacon fat were the highlight of every childhood Thanksgiving. The ones her mother cooked were sharper than the ones we buy today, so she cut them with mild potatoes, but you can adjust the proportions to your liking. If bacon is off the menu for you, add butter or olive oil to the pot instead, and more to taste after mashing.

Time 1h

Yield 6 servings

Number Of Ingredients 5

6 strips bacon
2 pounds rutabagas, peeled and cut into 1-inch chunks
2 large baking potatoes, peeled and cut into 1-inch chunks
Pinch of sugar, plus more to taste
Salt and freshly ground black pepper, to taste

Steps:

  • In a large, heavy pot over medium heat, cook bacon until fat is rendered, and bacon is beginning to brown. Add rutabagas and pour in water to cover. Bring to a boil, then lower to a fast simmer and cook 25 minutes.
  • Add potatoes to the pot and cook until both vegetables are very tender, about 20 minutes more. Drain, reserving about 2 cups of cooking liquid. Set bacon aside.
  • Mash the vegetables together until smooth or, for a finer texture, put through a food mill. Add reserved liquid as needed to loosen the mixture. Finely mince bacon and add to the vegetables. Add sugar, salt and pepper and stir well. Taste and adjust the seasonings. Transfer to a serving bowl and serve hot.

MASHED POTATO, RUTABAGA AND PARSNIP CASSEROLE WITH CARAMELIZED ONIONS

Mashed Potato, Rutabaga and Parsnip Casserole with Caramelized Onions image

Categories     Garlic     Onion     Potato     Side     Bake     Casserole/Gratin     Parsnip     Winter     Rutabaga     Bon Appétit     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Serves 8 to 10

Number Of Ingredients 9

7 cups canned low-salt chicken broth
3 pounds russet potatoes, peeled, cut into 1 1/2-inch pieces
1 1/2 pounds rutabagas, peeled, cut into 1/2-inch pieces
1 1/4 pounds parsnips, peeled, cut into 1 1/2-inch pieces
8 garlic cloves
1 bay leaf
1 teaspoon dried thyme
3/4 cup (1 1/2 sticks) butter, room temperature
3 large onions, thinly sliced

Steps:

  • Butter 13 x 9x2-inch glass baking dish. Combine first 7 ingredients in large pot; bring to boil. Reduce heat, cover partially and simmer until vegetables are very tender, about 30 minutes. Drain well. Transfer vegetables to large bowl. Add 1/2 cup butter. Using electric mixer, beat mixture until mashed but still chunky. Season with salt and pepper. Transfer mashed vegetables to prepared dish.
  • Melt remaining 1/4 cup butter in heavy large skillet over medium-high heat. Add sliced onions and sauté until beginning to brown, about 5 minutes. Reduce heat to medium-low and sauté until onions are tender and golden brown, about 15 minutes. Season with salt and pepper. Spread onions evenly over mashed vegetables. (Casserole can be prepared up to 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 375° F. Bake casserole uncovered until heated through and top begins to crisp, about 25 minutes.

Tips:

  • Choose the right potatoes and rutabagas: Use starchy potatoes like Russet or Yukon Gold for a creamier gratin. For rutabagas, select firm and smooth roots with no blemishes.
  • Cook the vegetables properly: Boil the potatoes and rutabagas until tender but not mushy. Drain well and allow to steam dry to prevent excess moisture in the gratin.
  • Use a flavorful cheese blend: Combine cheeses like Gruyère, Parmesan, and Cheddar for a rich and complex flavor. You can also add a little crumbled bacon or chopped herbs for extra savory notes.
  • Don't overcrowd the baking dish: Spread the potato and rutabaga mixture evenly in the baking dish to ensure even cooking. Overcrowding can lead to uneven browning and undercooked vegetables.
  • Bake until golden brown: Bake the gratin in a preheated oven until the top is golden brown and bubbly. The gratin is ready when a knife inserted in the center comes out clean.

Conclusion:

Mashed potato and rutabaga gratin is a delicious and comforting side dish that combines the best of both worlds. With its creamy mashed potato base, sweet and earthy rutabaga, and flavorful cheese topping, this gratin is sure to be a hit at your next gathering. Follow these tips and you'll have a perfect gratin every time!
