The savory cauliflower steak pairs beautifully with the sweetness from sweet potatoes, and the chimichurri seals the deal!

Pink Himalayan salt or kosher salt and freshly ground black pepper
1/4 cup olive oil
1 tablespoon fresh lemon juice
1 teaspoon paprika

2 medium Japanese sweet potatoes or white sweet potatoes, peeled and chopped

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
