Time 50m

Yield 4 to 6 servings

Number Of Ingredients 8

4 pounds russet potatoes, peeled and chopped into 1-inch pieces (about 5 large)
6 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
2 cloves garlic, peeled and smashed
Kosher salt

3/4 cup grated Parmesan
1/2 cup low-sodium chicken broth
Freshly ground black pepper

Time 55m

Yield 8

Number Of Ingredients 7

4 ½ pounds russet potatoes, peeled and halved lengthwise
½ cup mascarpone cheese at room temperature
1 egg yolk
¾ cup milk
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 cup butter, cut into chunks

Steps:

  • Place potato halves into a large pot of salted water, bring to a boil, and reduce heat to medium-low. Cook until very tender, about 15 minutes. A knife should pierce the middle of a potato half easily. Transfer potatoes to a colander and drain thoroughly, about 5 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Whisk mascarpone cheese in a mixing bowl until smooth. Stir egg yolk and milk into mascarpone cheese, whisking until smooth; season with salt, black pepper, and cayenne pepper.
  • Transfer potatoes to a separate large mixing bowl, add butter chunks to potatoes, and season with salt and black pepper. Mash butter into potatoes with a potato masher until fluffy; a few lumps are okay. Whisk mascarpone mixture into mashed potatoes.
  • Spread mashed potatoes into a 9x13-inch baking dish. Smooth the top and use the tip of a spatula to lightly press the potatoes and lift up to create little peaks and valleys in the top.
  • Bake in the preheated oven until potatoes are heated through and top is golden brown, about 20 minutes.

TWICE-BAKED POTATOES

Twice-Baked Potatoes image

At its simplest, a twice-baked potato is creamy, cheesy mashed potatoes cradled in crisp, salty skin. That's the recipe you see here: comforting, satisfying and pretty much ideal. But if you dream of other flavor combinations, like bacon, scallions and sour cream; blue cheese and chives; or cauliflower and Parmesan, just follow the recipe below and stir in any additions (reserving some for garnish) after the dairy in Step 3. Shower the top with more grated cheese if you like, then bake, garnish and dig in.

Time 2h

Yield 4 servings

Number Of Ingredients 9

4 tablespoons unsalted butter, cubed and softened
4 large russet potatoes
2 tablespoons canola or other neutral oil
Kosher salt
1/2 cup whole milk
1/2 cup sour cream
1/2 cup grated Cheddar cheese (about 2 ounces)
Black pepper
2 tablespoons chopped chives (optional)

Steps:

  • Position racks in the top and middle of the oven, and heat oven to 400 degrees. Take the butter out of the refrigerator to soften. Scrub the potatoes clean and pat them dry. Poke holes all over them with a fork. In a large bowl, toss them with the oil and 1/2 teaspoon salt. Place the potatoes directly on the top rack, and place a baking sheet or a piece of foil on the middle rack to catch drips. Bake for about 1 hour, until the skin is crisp and potatoes offer no resistance when a knife is inserted in their centers. Remove from the oven and let sit until cool enough to handle.
  • Slice the top third lengthwise off the potatoes. Use a spoon to scoop out the flesh, leaving 1/4-inch border of potato on the skin, and transfer the flesh to a medium bowl. Scrape the potato tops of all flesh, and add the flesh to the bowl. Place the bottoms on a parchment-lined baking sheet. (Snack on the tops - chef's treat - or discard.)
  • Mash the potato flesh with a fork or potato masher. Add the butter, and stir until smooth (try not to overwork). Add the milk, sour cream and cheese and stir to combine. (If you want the filling softer, add more milk.) Season generously with salt and pepper. Stir in the chives, if using.
  • Mound each potato skin with a quarter of the filling. Bake the potatoes until warmed through, about 10 minutes. Serve immediately.

MASHED POTATOES WITH CHIVES

Mashed Potatoes With Chives image

This is about as simple as it gets: classically prepared mashed potatoes - just potatoes, milk, butter and salt - get a generous handful of pretty chives stirred in. Be sure to add plenty of salt, and taste as you go; good mashed potatoes rely on it.

MASHED POTATO, CHEESE, AND CHIVE GRATIN

Yield Makes 6 servings

Number Of Ingredients 6

3 1/2 pounds russet potatoes, peeled, cut into 1-inch cubes
1 8-ounce package cream cheese, room temperature
1/2 cup sour cream
1/2 cup whole milk
3/4 cup chopped fresh chives (about 3 bunches)
1 tablespoon chilled butter, cut into small pieces

Steps:

  • Butter 6- to 8-cup ovenproof dish. Cook potatoes in large pot of boiling salted water until tender, about 12 minutes. Drain potatoes; return to same pot. Add cream cheese and mash well. Mix in sour cream and milk, then chives. Season potatoes with salt and pepper. Spoon potatoes into prepared dish; dot with chilled butter. (Can be made 2 hours ahead; let stand at room temperature.)
  • Preheat oven to 375°F. Bake potatoes until heated through and beginning to brown on top, about 30 minutes.

Tips:

  • For the best results, use Yukon Gold or russet potatoes. These potatoes have a high starch content, which makes them fluffy and creamy when mashed.
  • Make sure the potatoes are cooked thoroughly before mashing them. Otherwise, they will be lumpy and not as creamy.
  • Use a potato ricer to get the smoothest mashed potatoes. A ricer will remove any lumps and create a light and airy texture.
  • Don't overmix the mashed potatoes. Overmixing will make them gluey and dense.
  • Add the mascarpone cheese and chives at the end of the cooking process. This will help to preserve their flavor and prevent them from becoming overcooked.
  • Season the mashed potatoes to taste with salt, pepper, and garlic powder.
  • Serve the mashed potatoes immediately or keep them warm in a slow cooker until ready to serve.

Conclusion:

Mascarpone and chives mashed and baked potatoes are a delicious and elegant side dish that is perfect for any occasion. They are easy to make and can be customized to your liking. You can add different herbs, spices, or cheeses to create a unique flavor. These potatoes are sure to be a hit with your family and friends.
