4 ounces sliced almonds
1-1/4 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Divide almond paste into six equal portions. Form each into a cone shape, about 1-1/2 in. tall and 1 in. in diameter. Beginning at the base, insert pointed end of almonds into paste to resemble a pinecone., In a microwave-safe bowl, melt chocolate chips and shortening; stir until smooth. Insert a toothpick into bottom of each cone. Holding over bowl, spoon melted chocolate over almonds (if needed, use another toothpick to spread the chocolate to completely cover almonds). Place on a wire rack over waxed paper; let stand until firm.

165g salted butter, softened, plus extra for the tin
icing sugar, for dusting
350g marzipan
100g caster sugar
60g dark brown soft sugar
3 large eggs
200g self-raising flour
½ tsp baking powder
½ tsp almond extract
75ml milk
3 tbsp cocoa powder
50g dark chocolate chips
180ml double cream
140g dark chocolate, finely chopped
1 tbsp golden syrup
1 tsp almond extract

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 1kg loaf tin (ours was 14 x 24 x 7cm) and line with a long strip of baking parchment. Lightly dust a surface with icing sugar and roll the marzipan out to a 1cm-thick rectangle, then cut it so that it's just smaller than the base of the loaf tin.
  • Beat the butter and both sugars together in a large bowl using an electric whisk until light and fluffy. Beat in the eggs, flour, baking powder, almond extract, milk and cocoa powder until smooth. Fold in the chocolate chips, scraping down the sides of the bowl to ensure everything is combined.
  • Pour half the batter into the tin. Top with the marzipan rectangle, then pour the remaining batter on top and smooth the surface. Bake for 1 hr-1 hr 15 mins until golden, risen and a skewer inserted into the middle comes out clean. Leave to cool completely in the tin.
  • To make the ganache, bring the cream to a simmer in a small pan. Meanwhile, put the dark chocolate, golden syrup and almond extract in a heatproof bowl. Once the cream is simmering, pour it over the chocolate mixture and set aside for 2 mins to melt. Whisk until smooth, then leave for 5 mins to cool and thicken slightly. Pour the ganache all over the cake, and cut into slices to serve.

1 (7 ounce) can almond paste
1/4 cup soft butter
1/2 cup sugar
1 cup ground almonds
2 eggs
1/4 teaspoon almond extract
1 cup flour
1 teaspoon baking powder
2 tablespoons water
1/4 cup apricot preserves

Steps:

  • Preheat the oven to 350 degrees.
  • Butter and flour a 9" cake pan.
  • Cream the almond paste with the butter and sugar.
  • Mix in the almonds.
  • In a small bowl, beat the eggs lightly with almond extract and add to the creamed mixture.
  • Combine the flour and baking powder and stir into butter mixture.
  • Mix with a few strokes as possible.

3 large oranges
2 cups plus 2 tablespoons all purpose flour
1 cup whole almonds
2 teaspoons baking powder
1/2 teaspoon salt
2 cups plus generous 1 tablespoon sugar
1 cup unsalted butter, room temperature
4 large eggs
1 cup whole milk
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 cups fresh orange juice
Chocolate Icing
Additional whole almonds
Small orange-slice triangles
Fresh mint leaves

Steps:

  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Dust with flour; tap out excess. Using vegetable peeler, remove peel (orange part only) in strips from oranges. Coarsely chop enough peel to measure 1/2 cup. Combine flour, 1 cup almonds, baking powder and salt in processor; blend until finely ground. Transfer to medium bowl. Place 2 cups sugar and orange peel in processor; blend until peel is finely minced.
  • Using electric mixer, beat butter in large bowl until blended. Add sugar mixture and beat until fluffy. Beat in eggs 1 at a time. Mix milk and both extracts in small bowl. On low speed, beat flour mixture into egg mixture alternately with milk mixture in 3 additions each. Divide batter among prepared pans.
  • Bake cakes until tester inserted into center comes out clean, about 25 minutes. Cool cakes in pans on racks 5 minutes. Turn cakes out onto racks and cool completely. Boil 1 1/2 cups fresh orange juice and remaining generous 1 tablespoon sugar in small saucepan until reduced to 1/2 cup, about 8 minutes. Brush warm juice mixture over tops of cooled cakes.
  • Place 1 cake layer, orange syrup side up, on cake platter. Spread 1 cup Chocolate Icing over. Top with second cake layer, then 1 cup icing. Top with third cake layer, syrup side up. Spread remaining icing over top and sides of cake. (Can be prepared 1 day ahead. Cover with cake dome and store at room temperature.) Arrange additional almonds, orange triangles and mint leaves around top edge of cake. Slice cake and serve.
