Steps:

  • Cut the Buddig Beef into strips, then into short segments. (Approximately ½ X 1 inch)
  • Place a large skillet over medium heat. Add the butter. Once melted, whisk in the flour to create a roux. Cook the roux for 2-3 minutes until light-gold in color.
  • Whisk in the milk. Then add the onion powder, thyme, and cayenne. Simmer to thicken for 2-3 minutes. Then add in the dried beef. Cook another 1-2 minutes to warm the beef and thicken. (If the gravy thickens too much, add another splash of milk.)

2 pkg buddig chopped, smoked, and pressed beef
1/4 c all purpose flour
2 c milk
6 Tbsp butter
1/2 tsp salt
dash(es) black pepper
1 can(s) (15 oz.) cream-style sweet corn
6 slice cheddar cheese
4-6 slice bread for toast

Steps:

  • 1. Cut the chipped beef into small, bite-size pieces. In a large, deep skillet, melt 4 Tbsp. butter at medium temperature. Add the beef and cook until hot, stirring to break up pieces.
  • 2. Stir in flour until a thick paste is formed. Add remaining 2 Tbsp. of butter. Gradually stir in milk.
  • 3. When mixture begins to bubble, add creamed corn and cheese. Mix well and simmer 5 minutes over low heat. Season with salt and pepper. Serve hot over toast.

2 cups whole milk
