CHEESE SCALLOPED CABBAGE

Cheese Scalloped Cabbage image

Like cabbage? You will LOVE this recipe! I found this treasure in a 1968 edition of the Missouri Farm Bureau Cookbook.

Provided by Lorac

Categories     Cheese

Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

1/4 cup boiling water
1/2 teaspoon salt
4 cups shredded cabbage
2 eggs, beaten
1/4 cup white vinegar
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1 cup coarsely crushed potato chips

Steps:

  • Preheat oven to 350°F.
  • Add salt and cabbage to the boiling water, stir and boil 2-3 minutes.
  • Remove from heat but do not drain.
  • In a bowl, combine eggs, vinegar and mayonnaise, mix in cabbage and cooking liquid.
  • Pour into a 1 quart casserole, top with cheese and potato chips and bake 25-30 minutes.

Tips:

  • Use fresh cabbage. Fresh cabbage has a more vibrant flavor and texture than cabbage that has been stored for a long time.
  • Shred the cabbage thinly. This will help it cook evenly and absorb the flavors of the other ingredients.
  • Use a variety of cheeses. A combination of cheeses, such as cheddar, Parmesan, and Gruyère, will give the scalloped cabbage a rich and complex flavor.
  • Don't overcook the cabbage. Cabbage should be cooked until it is tender but still has a slight crunch. Overcooked cabbage will be mushy and bland.
  • Serve the scalloped cabbage immediately. Scalloped cabbage is best served hot out of the oven. Leftovers can be stored in the refrigerator for up to 3 days.

Conclusion:

Mary's Cheesy Scalloped Cabbage is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover cabbage and is a delicious and affordable meal that can be enjoyed by people of all ages. So next time you're looking for a quick and easy side dish, give Mary's Cheesy Scalloped Cabbage a try.
