A zippy simple mini meatloaf recipe that I consider the best meatloaf recipe ever! It's a true family favorite that makes a great freezer meal for nights when you're too busy to cook.

1 1/2 cups seasoned bread crumbs
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 tablespoon caraway seeds
1 teaspoon dried thyme (or 1 tablespoon fresh)
1/2 onion (roughly chopped)
1 carrot (roughly chopped)
1 celery stalk (roughly chopped)
1/2 red bell pepper (roughly chopped)
4 cloves garlic
1 pound ground turkey
1 1/2 pounds ground beef chuck
1 egg
1/4 cup milk
2 teaspoons Worcestershire sauce
1/2 cup chili sauce ((Heinz))
1 tablespoon balsamic vinegar
1 1/2 teaspoons honey
1/2 teaspoon ground cumin

Steps:

  • Preheat oven to 360 degrees F. Place all the veggies and garlic in the food processor and pulse until it's the consistency of apple sauce.
  • Place the veggie pulp in the bowl with the bread crumbs, herbs and spices, ground meats, egg, milk and Worcestershire.
  • Toss together, then mix thoroughly by hand, but don't squeeze the mixture too much!
  • Separate the mixture into 8 equal portions-I like to do this by cutting the mixture in the bowl. This ensures consistency in size. Shape each portion into a loaf, and place them on a rimmed cookie sheet lined with parchment paper.
  • Mix all the ingredients for the glaze in a small bowl.
  • Brush the loaves with glaze, leaving extra on the top. Place in the oven and bake until a meat thermometer reads 160 degrees F-approximately 30 minutes.
  • Tint with foil and let rest 5 minutes out of the oven before serving. *For one large classic meatloaf, shape all the mixture into a loaf measuring 10x5x4 inches. Bake approximately 1 1/2 hours to 160 degrees F.

½ cup chopped onion
½ cup rolled oats
1 cup shredded Cheddar cheese
¾ cup milk
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.

3 to 4 tablespoons packed brown sugar
1 teaspoon ground mustard
2 large eggs, lightly beaten
4 teaspoons Worcestershire sauce
3 cups Crispix cereal, crushed
3 teaspoons onion powder
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. 4 slices white bread, torn into pieces
2 1/2 lbs lean ground beef
1 medium onion, peeled and quartered
2 garlic cloves
2 celery ribs
2 carrots, peeled and cut into 2 inch chunks
1/2 cup fresh parsley leaves (fresh)
1 large egg
1/2 cup ketchup
2 teaspoons dry mustard
1 tablespoon salt
2 teaspoons fresh ground pepper
1/2 cup ketchup
4 teaspoons dry mustard
4 tablespoons brown sugar

Steps:

  • Heat oven to 400°.
  • Place bread in food processor and pulse to make fine bread crumbs, add to meat and mix.

1 cup water
1 teaspoon italian seasoning
1/2 cup pasta sauce
1/2 cup mozzarella cheese, shredded
2 teaspoons chili powder
1/2 cup salsa
1/2 cup monterey jack cheese, shredded
1 teaspoon dried oregano
1/2 cup roasted red pepper
1/2 cup feta cheese, crumbled
1 teaspoon garlic powder
1/2 cup barbecue sauce
1/2 cup cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
  • Press evenly into 12 greased muffin tins.
