SIMPLE TURKEY MEATLOAF

Simple Turkey Meatloaf image

Everyone needs an easy turkey meatloaf recipe. Emeril shared his ketchup-topped version with Martha. It comes from his book, " Emeril 20-40-60."

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes     Ground Turkey Recipes

Time 1h

Yield Serves 4 to 6

Number Of Ingredients 12

1 1/2 pounds ground turkey, preferably 85 percent lean/15 percent fat, or a mix of ground breast and thigh meat
2/3 cup chopped yellow onion
1/2 cup chopped red or green bell pepper
1/2 cup unseasoned dried bread crumbs
1/3 cup chopped celery
1 large egg, lightly beaten
1/2 cup ketchup
1 tablespoon minced garlic
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1 tablespoon hot sauce
1 tablespoon Creole Seasoning

Steps:

  • Preheat oven to 375 degrees with rack positioned in center of oven.
  • Place turkey in a large bowl. Add onion, bell pepper, breadcrumbs, celery, egg, 1 tablespoon ketchup, garlic, Essence, salt, and pepper. Gently mix until ingredients are well combined. Transfer turkey mixture to a 1-pound loaf pan; form into a domed loaf shape.
  • Place remaining ketchup in a small bowl; stir in hot sauce. Spoon ketchup mixture evenly over meatloaf, spreading with the back of a spoon.
  • Bake until meatloaf is browned on top, cooked through, and an instant-read thermometer inserted in the center registers 165 degrees, 45 to 50 minutes.
  • Remove pan from oven and let meatloaf stand 5 minutes before serving.

Tips:

  • Choose your turkey wisely: Opt for ground turkey with a higher fat content (at least 8%) for a more flavorful and moist meatloaf.
  • Don't overmix the meatloaf mixture: Overmixing can result in a tough texture. Mix just until the ingredients are well combined.
  • Use breadcrumbs or oats as binders: They help absorb excess moisture and keep the meatloaf together.
  • Add vegetables for flavor and texture: Chopped onions, bell peppers, carrots, or zucchini are great options.
  • Season the meatloaf generously: Use a combination of herbs, spices, and seasonings to enhance the flavor.
  • Bake the meatloaf at a high temperature initially, then reduce the heat: This helps create a crispy crust while keeping the inside moist.
  • Let the meatloaf rest before slicing: This allows the juices to redistribute, resulting in a more tender and flavorful loaf.
  • Serve the meatloaf with your favorite sides: Mashed potatoes, roasted vegetables, or a salad are all great choices.

Conclusion:

Martha's Turkey Meatloaf Sandwich is a delicious and versatile dish that can be enjoyed for lunch or dinner. The combination of ground turkey, bread crumbs, eggs, and seasonings creates a moist and flavorful meatloaf. The addition of a tangy tomato sauce and melted cheese takes this sandwich to the next level. Whether you serve it on its own or as part of a larger meal, this sandwich is sure to please everyone at the table.
