Number Of Ingredients 14

1 small sugar pumpkin, halved, seeds and stringy fibers removed and reserved
6 tablespoons unsalted butter
3 cups homemade or low-sodium store-bought chicken stock
3 cups water
1 sprig fresh thyme
1 small parsnip (about 4 ounces), peeled and coarsely chopped
1 small Yukon gold potato (about 6 ounces), peeled and coarsely chopped
1 small turnip (about 4 ounces), peeled and coarsely chopped
2 small shallots, minced (about 1/4 cup)
1/2 cup dry white wine
3 tablespoons heavy cream
1 teaspoon packed light-brown sugar
2 teaspoons coarse salt
Freshly ground pepper, to taste

Steps:

  • Preheat oven to 400 degrees. Place pumpkin halves, cut sides down, on a rimmed baking sheet. Bake until soft, about 50 minutes. Scoop out flesh, and puree in a food processor (you should have 2 cups).
  • Melt 1 tablespoon butter in a small saucepan over medium-high heat. Add reserved seeds and fibers from pumpkin, and cook for 4 minutes. Add stock, water, and thyme, and bring to a gentle simmer. Cook for 9 to 10 minutes.
  • Meanwhile, melt remaining 5 tablespoons butter in a large saucepan over medium-high heat. Add pumpkin puree, parsnip, potato, and turnip, and cook for 5 minutes. Add shallots, and cook until soft, about 4 minutes. Add wine, and cook until liquid has reduced by half.
  • Strain pumpkin-seed mixture, reserving broth and discarding solids. Add broth to pumpkin-wine mixture. Bring to a simmer; cook 20 minutes. Let cool.
  • Pass soup through a food mill into a clean saucepan, or puree in a food processor in small batches until smooth. (If soup does not reach desired consistency using a food processor, press it through a fine sieve to remove any remaining lumps.) Heat soup in a saucepan over medium-high heat. Stir in cream, sugar, salt, and pepper, and serve.

Yield Makes 6 to 8 servings

Number Of Ingredients 14

1/2 pound pig's tail, salted (optional)
3 pounds beef with bone, such as short ribs or shin
2 pounds pumpkin, peeled and cubed
10 cups water
3 whole scallions, crushed
2 cloves garlic, crushed
1 whole Scotch bonnet pepper
1 sprig fresh thyme or 1 teaspoon dried
1 1/2 teaspoon salt (optional)
1/2 teaspoon freshly ground black pepper
1/2 pound yellow or white yam, peeled and chopped (optional)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup water

Steps:

  • If you are using pig's tail, soak it in two 10-minute water baths and rinse. Place it in a large soup pot along with the beef, pumpkin and water. Bring to a boil, reduce the heat to medium-low and simmer until the pumpkin has dissolved and the beef is tender, about 1 1/2 hours.
  • Meanwhile, to prepare the spinners, in a medium-size bowl, sift together the flour and salt. And the water and blend with a wooden spoon until a ball is formed. Flour your hands and knead slightly to form a soft dough. Add more flour if the dough is too sticky. Cover and set aside.
  • When the meat is tender, remove it from the pot. Separate the meat from the bones, chop it, and return it to the pot. Bring to a brisk simmer over medium heat and add the scallions, garlic, Scotch bonnet pepper, thyme, salt (if not using pig's tail), and black pepper. If using, place the yam in the pot.
  • Bring to a simmer again. Form the spinners by rolling small pieces of dough between your floured palms to form 1-inch-long oblong shapes. Drop the spinners into the soup one at a time. Stir gently to prevent them from sticking to the bottom. Continue to cook the soup for 15 minutes. Remove the whole Scotch bonnet pepper before serving.

BEEF, PUMPKIN, AND SHIITAKE SOUP

Beef, Pumpkin, and Shiitake Soup image

This deceptively simple recipe is inspired by flavors from around the world: from Vietnamese pho to a rustic French stew to the famous oxtail soups from the Caribbean. When the beef chuck or neck bones are fork-tender, you add the vegetables that won't need long to cook. Fresh basil and a splash of fish sauce are not to be skipped-the latter adds an exceptional hint of umami flavor.

Provided by Greg Lofts

Categories     Beef Recipes

Time 2h50m

Number Of Ingredients 12

3 pounds beef chuck, neck bones, shin bones, or oxtail (or a combination)
1 large onion, halved and peeled
Kosher salt
1/2 teaspoon whole black peppercorns
1 dried bay leaf
2 thyme sprigs
1 pound pumpkin or winter squash, such as Sugar Pie, calabaza, or butternut, peeled, seeded, and cut into bite-size pieces (2 1/2 cups), peels reserved
6 ounces shiitake mushrooms, stems removed and reserved, caps sliced into 1/2-inch pieces
1/2 small head Savoy or Napa cabbage (8 ounces), 1 large outer leaf removed and reserved, the rest cored and cut into bite-size pieces
1 basil sprig, plus more leaves for serving
3 tablespoons Thai or Vietnamese fish sauce, plus more to taste
2 tablespoons fresh lime juice, plus more to taste

Steps:

  • Combine beef and 10 cups water in a pot. Bring to a boil, skimming any foam and impurities from surface. Add half of onion, 2 teaspoons salt, peppercorns, bay leaf, thyme, pumpkin peels, shiitake stems, and cabbage leaf. Gently boil over medium-low heat, partially covered, until meat is falling-off-the-bone tender, about 2 hours. Strain (if you want a clear broth, line a fine-mesh sieve with cheesecloth), reserving broth and beef and discarding remaining solids. Wipe pot clean.
  • Return broth and beef to pot. Coarsely chop remaining onion half and transfer to pot, along with pumpkin and mushroom caps. Simmer over low heat until pumpkin is crisp-tender but still holding its shape, about 10 minutes. Stir in cabbage and basil sprig; simmer until cabbage is tender but still vibrant green, about 5 minutes more. Remove and discard basil. Stir in fish sauce and lime juice. Add more salt, fish sauce, and lime to taste, and serve topped with basil leaves.

Tips:

  • Select the right pumpkin: Choose a small, sugar pumpkin or pie pumpkin that is about 3 to 4 pounds in size. Make sure it has a smooth, unblemished skin and a deep orange color.
  • Prepare the pumpkin: Cut the pumpkin in half lengthwise and scoop out the seeds and pulp. Brush the inside of the pumpkin with melted butter and season it with salt and pepper.
  • Roast the pumpkin: Place the pumpkin halves cut-side up on a baking sheet and roast them in a preheated oven at 375°F for about 45 minutes, or until the flesh is tender.
  • Make the soup: In a large pot, sauté onions, garlic, and ginger in olive oil until softened. Add the roasted pumpkin flesh, vegetable broth, and spices. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  • Puree the soup: Use an immersion blender or a regular blender to puree the soup until smooth. Season to taste with salt and pepper.
  • Garnish and serve: Ladle the soup into bowls and garnish with pumpkin seeds, croutons, or a dollop of sour cream.

Conclusion:

Martha Stewart's pumpkin soup in a pumpkin is a delicious and festive dish that is perfect for fall gatherings. The soup is creamy, flavorful, and has a beautiful presentation. With a few simple tips, you can easily make this soup at home and enjoy the taste of the season.
