Time 40m

Number Of Ingredients 10

2 tablespoons olive oil
2 medium onions, chopped
2 pounds carrots, chopped
2 sweet potatoes (1 1/4 pounds total), peeled and chopped
1 piece fresh ginger (2 inches long), peeled and finely chopped (2 tablespoons)
2 cans (14.5 ounces each) reduced-sodium chicken broth
Coarse salt and ground pepper
2 to 3 teaspoons sugar
2 to 3 teaspoons fresh lemon juice (from 1 lemon)
1/4 cup heavy cream (optional)

Steps:

  • In a large (5-quart) saucepan, heat oil over medium; add onions and cook, stirring occasionally, until translucent, about 5 minutes. Add carrots, sweet potatoes, ginger, broth, and 4 cups water. Season with salt and pepper.
  • Bring to a boil, reduce to a simmer, and cook until vegetables are tender, about 20 minutes. Working in batches, puree mixture in a blender until smooth; add sugar and lemon juice to taste. Season with salt and pepper, if necessary. (If freezing, proceed to step 3.) Return soup to pan; heat over medium, stirring in cream, if desired.
  • To freeze: Cool to room temperature. Divide among airtight containers (leaving 1 inch space at top), and freeze up to 3 months. To heat, place container upside down under hot tap water to release block of soup; place in a medium saucepan. Cover, and cook over medium-low, adding water to thin, if necessary. VELVETY CARROT SOUP

Velvety Carrot Soup image

Warm up on a cool evening with this nutritious -- and delicious -- recipe for carrot soup, courtesy of Martha's personal chef, Tony Esnault.

Provided by Martha Stewart

Categories     Food & Cooking     Lunch Recipes

Number Of Ingredients 13

3 tablespoons unsalted butter
2 pounds carrots, preferably with stems, peeled and sliced 1/2-inch thick on the bias
1/4 cup diced onion
1 clove garlic, chopped
1 teaspoon chopped fresh ginger
Pinch of sugar
Coarse salt and freshly ground pepper
1 tablespoon olive oil
2 parsnips, peeled and sliced crosswise into 1/2-inch rounds
1 teaspoon white-wine vinegar
2 cups homemade or store-bought low-sodium chicken broth
3/4 cup milk
1/4 cup flat-leaf parsley leaves, thinly sliced

Steps:

  • In a medium-size saucepan with a lid, melt butter over medium heat. Reserve 1/2 cup carrots and add remaining carrots to saucepan along with onion, garlic, ginger, sugar, 2 teaspoons salt, and a pinch of pepper; stir to combine. Reduce heat to medium-low, cover, and cook until carrots are soft, 10 to 15 minutes.
  • Meanwhile, heat oil in another medium-size saucepan over medium heat. Add reserved 1/2 cup carrots, parsnips, and season with salt and pepper. Cook, stirring, until they begin to color slightly, about 2 minutes. Cover and cook until tender, about 5 minutes more.
  • Increase heat to medium-high and add vinegar, stirring to coat; cook for 1 minute. Remove from heat and divide vegetable mixture evenly between 4 soup bowls.
  • Add chicken broth and milk to carrot and onion mixture; season with salt and pepper. Bring to a boil and working in batches, transfer to the jar of a blender (do not fill more than halfway); loosely cover and carefully puree until very smooth and frothy. Pour soup over vegetables in soup bowls and garnish with parsley. Serve immediately.

Tips:

  • Choose the right carrots: For the best flavor, use fresh, sweet carrots. Avoid carrots that are limp or have blemishes.
  • Use fresh ginger: Fresh ginger has a more intense flavor than ground ginger. If you don't have fresh ginger, you can use 1/2 teaspoon of ground ginger instead.
  • Don't overcook the soup: Overcooked carrots will become mushy and lose their flavor. Simmer the soup for just until the carrots are tender.
  • Add a squeeze of lemon juice: A squeeze of lemon juice adds a bright, citrusy flavor to the soup. Add it just before serving.
  • Garnish with fresh herbs: Fresh herbs such as cilantro, parsley, or chives add a pop of color and flavor to the soup. Add them just before serving.

Conclusion:

Martha Stewart's Carrot Ginger Soup is a delicious and healthy soup that is perfect for a quick and easy meal. It is packed with flavor and nutrients, and is a great way to warm up on a cold day. With a few simple tips, you can make this soup even better. So next time you're looking for a quick and easy meal, give this Carrot Ginger Soup a try. You won't be disappointed.
