2 pork tenderloins

2 shallots, minced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat pork tenderloins generously with mustard. Oil a 9x13 inch baking dish.

10 ounces white mushrooms, thinly sliced
2 ounces sliced prosciutto, cut into 2-by-1/4 inch strips (not paper thin)

3/4 cup dry marsala (cooking wine)

1 1/2 pounds mushrooms, cleaned and sliced
2 cups Marsala wine
1 cup beef stock
1 tablespoon freshly chopped thyme leaves
8 (8 to 10-ounce) New York Strip steaks
Salt and freshly ground black pepper
1/2 cup unsalted butter (1 stick)
1/2 bunch fresh chives, chopped

Steps:

  • Begin the Marsala sauce by heating the olive oil in a large saute pan. Cook the shallots (or onion) and mushrooms gently until they become translucent. Deglaze the pan with the wine and add the stock and fresh thyme. Allow to reduce by two-thirds.
  • Preheat the grill to medium-high heat and season meat on both sides with salt and pepper. Sear the meat on both sides, and grill to about 128 degrees F internal temperature for medium-rare. Remove meat from grill and let rest.
  • Strain Marsala sauce and whisk in butter to finish. Season with salt and pepper, as needed. Spoon the sauce over the grilled steaks, garnish with chopped chives, and serve.

2 lbs pork tenderloin (about 2 tenderloins)
kosher salt
fresh ground black pepper
3 tablespoons extra virgin olive oil
3 tablespoons unsalted butter
2 medium shallots, finely diced
12 ounces cremini mushrooms, thinly sliced
1 tablespoon all-purpose flour
1/2 cup dry marsala
1 cup low sodium chicken broth
3 tablespoons heavy cream
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Trim the tenderloins of silverskin and any excess fat. Cut the tenderloins into 2-inch-thick medallions. Flip each medallion onto a cut side and press down with the palm of your hand to flatten slightly. Season the meat with 3/4 teaspoons salt and 1/4 teaspoons black pepper.
  • Heat the olive oil and 1 Tbs. of the butter in a large sauté pan over high heat. 8 slices mozzarella cheese, about 4 ounces
1/4 cup butter
1 tablespoon flour
1 dash fresh ground pepper

1/2 cup marsala wine
chopped fresh parsley

Steps:

  • Pound each veal cutlet between sheets of waxed paper or plastic wrap to 1/8-1/4" thickness. (Very thin.).
  • Place prosciutto slices on top of each cutlet.
  • Top each with mozzarella cheese.
  • Roll up each cutlet and secure with wooden toothpicks.

1 lb portabella mushroom ravioli (about 12 ravioli per box)
1 1/3 cups marsala wine
1 1/3 cups heavy cream
1/8 cup 2% low-fat milk
1 tablespoon olive oil
3 cups sliced mushrooms

  • Fill a large pot with about 4 quarts of water. Set the burner to high and boil. Add frozen ravioli to boiling water for 6-8 minutes, stirring occasionally (very gently). The ravioli are done when they float to the top of the water.
  • At the same time you are boiling the water, heat a large skillet with the olive oil. Add onions and mushrooms and sauté until tender, about 3 minutes. Add the Marsala wine and bring to a boil.

4 cups chicken stock or canned low-salt broth

Steps:

  • Preheat oven to 350°F. Season veal generously with dried thyme, salt and pepper. Heat heavy large skillet over high heat. Add veal bones and cook until some fat is rendered, turning occasionally, about 5 minutes. Add onions and sauté until brown, about 15 minutes. Sprinkle flour over and stir 3 minutes. Transfer mixture to large roasting pan, spreading onions in center and bones around edge. Add 1 brisket to same skillet and cook until brown, about 5 minutes per side.   • Transfer briskets to platter. Remove bones from pan and discard. Spoon onions into strainer set over large saucepan. Press onions hard to release juices. Discard onions in strainer. Set mushrooms aside. Strain pan juices in roasting pan into same large saucepan. Spoon fat from top of pan juices and discard. Boil until pan juices coat spoon lightly, about 20 minutes. Return reserved mushrooms to sauce. Season to taste with salt and pepper.
  • Cut briskets diagonally across grain into thin slices; trim fat, if desired. Overlap slices in large casserole. Spoon mushroom sauce over. (Can be prepared 3 days ahead. 2 teaspoons vanilla extract

1 1/3 cups chilled whipping cream
Sauce
2 cups sweet Marsala
1/2 cup sugar
2 teaspoons grated lemon peel
1/8 teaspoon ground nutmeg
5 fresh strawberries, halved

Steps:

  • For crust:
  • Preheat oven to 350°F. Finely grind amaretti cookies in processor (makes about 1 1/2 cups crumbs). With processor running, gradually add melted butter and process until crumbs begin to stick together. Press crust mixture onto bottom and up sides of 9-inch-diameter tart pan with removable bottom. Bake crust until pale golden, about 6 minutes. Cool. Gently press up bottom of pan just to loosen crust from sides (do not remove from pan). Place crust in freezer.
  • For filling:
  • Soak currants in 1/2 cup Marsala in small bowl for 1 hour.
  • Whisk remaining 1 cup Marsala, sugar and yolks in large metal bowl. Set bowl over saucepan of rapidly simmering water and whisk until candy thermometer inserted into mixture registers 170°F, about 4 minutes. Remove bowl from over water. Whisk in corn syrup, vanilla and nutmeg. Refrigerate zabaglione until cool, whisking occasionally, about 20 minutes.
  • Beat cream in bowl to stiff peaks. Add zabaglione and beat just until smooth. Drain currants and fold into zabaglione (reserve Marsala for another use). Place in freezer until slightly stiffened but not frozen, about 1 hour.
  • Spoon zabaglione cream into crust, mounding in center. Freeze until almost firm, about 2 hours. Cover and freeze until firm, at least 6 hours or overnight.
  • For sauce:
  • Stir Marsala and sugar in heavy medium saucepan over medium heat until sugar dissolves. Increase heat and boil until syrup is reduced to generous 2/3 cup, about 17 minutes. Steps:

  • Place chicken breasts between 2 sheets of waxed paper. Pound lightly with the smooth side of a meat mallet. Cut a pocket into each chicken breast.

  • Stir butter and flour into the skillet until sauce thickens, about 5 minutes. Serve sauce over chicken.

Salt and freshly ground pepper to taste
Flour for dredging
2 tablespoons butter
2 tablespoons olive oil
6 tablespoons Marsala wine
4 thin slices of prosciutto
4 thin slices Fontina or Gruyere cheese

Steps:

  • Preheat the broiler to high.
  • Cover the meat with plastic wrap and pound it lightly with a meat pounder. Sprinkle both sides with salt and pepper and dredge all over in a little flour.
  • Heat the butter and oil in a heavy nonstick skillet large enough to hold the slices in one layer. When it is very hot add the meat. Brown on both sides over high heat and transfer to a hot ovenproof serving platter.
  • Add the wine to the skillet and cook, stirring, over high heat until the wine becomes syrupy. Spoon this over the meat. Top each piece of meat with one slice of prosciutto and a slice of cheese. Run quickly under the broiler until the cheese melts. Serve.

1/4 cup sugar
Zest and juice of 1 large lemon
1/4 teaspoon nutmeg
1 pound strawberries, hulled and quartered
16 amaretti or 4 (4-inch) long biscotti cookies, crushed
Serving suggestion: 2 cups vanilla bean gelato or ice cream.

Steps:

  • For the sauce: In a small saucepan, combine the wine, sugar, lemon zest, and lemon juice over medium-high heat. Bring the mixture to a simmer, stirring constantly until the sugar has dissolved. Cook until the liquid has reduced by half, 25 minutes. Remove the pan from the heat and stir in the nutmeg. Allow the sauce to cool for 30 minutes. Refrigerate for at least 1 hour before serving (can be made 3 days in advance).

5 lamb loin chops
2 tablespoon all-purpose flour
1 teaspoon salt and peper

8 ounces fresh crimini mushrooms, sliced
2 shallots, thinly sliced

1/2 cup Marsala wine (or dry white wine)

Steps:

  • In a shallow bowl mix flour with salt and pepper. Lightly dredge loin chops in flour.
  • In a large frying pan, over medium-high heat, add olive oil. When oil is hot add loin chops to pan. Sear on either side for 2-3 minutes. Remove from pan and set aside.
  • . To same pan, add butter and mushrooms. Sauté mushrooms until liquid is released, about 5 minutes. Add shallots and garlic. Cook 1-2 minutes or until fragrant.
  • Slowly add wine to deglaze the pan; using spatula to scrape the pan clean. Add chicken stock, Dijon mustard, and seared loin chops to the pan. Continue to simmer, stirring frequently, until sauce is slightly thickened.

1 can, or about 1 1/2 cups beef broth
salt and pepper, to taste
4 veal chops, 3/4 to 1-inch thick
salt and pepper or seasoning blend with salt

Steps:

  • Add olive oil and butter to heavy saucepan over medium-low heat. Add mushrooms; saute until mushrooms are just tender. Add green onions and garlic and sauté for 1 minute longer. Add flour and cook, stirring, for about 30 to 60 seconds, until flour is well incorporated into the butter and vegetable mixture. Add beef stock and Marsala; cook until thickened and slightly reduced. Add a little freshly grated pepper; taste and add salt, if necessary. Season veal chops on both sides with salt and pepper or seasoning blend. In a stove top grill pan or frying pan, sear the veal chops for 3 to 4 minutes on each side. Arrange chops in a baking dish, or leave in the same skillet if it can go into the oven. Pour sauce over the chops and pop into the oven. Bake for about 15 minutes at 375°.
