4 Mars Bars, chopped, (the "standard" size weigh 51g each - the bars from the multipack are 39.4g so if you're using these, you will need 6 bars!
75 g butter
3 tablespoons golden syrup
225 g Rice Krispies
200 g milk chocolate
1 Mars bar for decoration (optional)

Steps:

  • Grease and line a 9x9 baking tin with baking parchment.
  • Melt the Mars Bars, butter and golden syrup together over a low heat in a large saucepan. The nougat in the Mars bar will take a while to melt down so keep stirring until you have a smooth, melted mixture.
  • Pour the rice crispies over the melted mixture and stir very well until all the rice crispies are coated.
  • Pour into the tin, smooth the top and pop in the fridge while you melt the chocolate for the topping.
  • Melt the milk chocolate in the microwave or in a heatproof bowl set over a pan of simmering water. Pour the melted chocolate all over the crispy cake. Decorate with chopped Mars Bar pieces if desired.
  • Leave to set in the fridge for about an hour before cutting into slices.

1/4 cup unsalted butter
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
2 (58 g) Mars bars, coarsely chopped
1/2 cup unsalted butter
1 1/2 cups icing sugar
1 teaspoon vanilla extract
1 tablespoon milk
1 (58 g) Mars bars, thinly sliced

Steps:

  • For cake.
  • Grease and flour 10-inch tube pan with removable bottom.
  • In small pan on low heat, melt bars stirring frequently until blended.Set aside.
  • In medium bowl,sift together flour, baking powder and baking soda.
  • In large bowl, use electric hand mixer on medium low speed, then medium speed ,to beat together sugar and shortening until fluffy, about 5 minutes.Beat in eggs 1 at a time thoroughly incorporating each one. Beat in vanilla and Mars bar mixture until blended.Beat in a third of flour mixture.
  • Beat in half of the buttermilk.Beat in the remaining flour mixture. Beat in the remaining buttermilk.
  • Pour batter into prepared pan ,bake in preheated 325 oven 55 minutes or until tester comes out clean. Cool on wire rack 15 minutes.Turn out of pan on to serving plate.Cool completely.
  • For icing, melt bars and butter on low heat, stirring frequently until blended.Remove from heat. Cool 5 minutes. Add icing sugar, milk and vanilla. Whisk vigorously until smooth. Spoon over cake,allowing it to drip down sides.
  • For topping arrange Mars slices decoratively on top of cake.

  • Cut the Mars Bars into small slices and melt with the margarine in a glass bowl over a saucepan of boiling water.
  • Take off the heat and mix in the Rice Crispies one cup at a time until the mixture is only slightly gooey.

  • Heat up the milk chocolate in a glass bowl and spoon evenly over the Crispies.
  • Leave to cool slightly then place in the fridge for a few hours until set.

400 g good-quality dark chocolate, chopped
1/2 cup cocoa powder
2 cups caster sugar
6 eggs, lightly beaten
1 1/2 cups self-raising flour
2 (60 g) Mars bars, chilled, chopped
double heavy cream, to serve (optional)

Steps:

  • Preheat oven to 160°C
  • Grease a 4cm-deep, 22.5cm x 28cm (base) slab pan. Line with baking paper, allowing 2cm overhang at both long ends.
  • Combine butter and dark chocolate in a large, heatproof, microwave-safe bowl. Microwave, uncovered, on MEDIUM-HIGH for 3 to 4 minutes (stirring every minute with a metal spoon) or until almost melted.
  • Add cocoa and whisk until smooth.
  • Add sugar and mix well. Add one third of the egg and stir to combine. Repeat process with egg in 2 batches.
  • Sift flour over chocolate mixture. Stir gently until just combined.
  • Pour mixture into prepared pan. Sprinkle Mars Bars over batter and press in slightly.
  • Bake for 60 to 65 minutes or until a skewer inserted into the centre has moist crumbs clinging.
  • Cool completely in pan.

  • Lightly grease a 15cm (6in) shallow square tin.
  • Cut the Mars bars into thin slices and put in pan with 75g of butter. Leave on low heat until melted, then beat till smooth.
  • Stir in the rice crispies. Chill for an hour, (till set).
  • Next put the chocolate and butter in a bowl and melt over hot water on a low heat and spread ontop.

Tips:

  • To make the cake moist and fluffy, cream together the butter and sugar until light and fluffy, then gradually beat in the eggs one at a time.
  • Add the flour, cocoa powder, baking powder, and salt to the creamed mixture alternately with the milk, beginning and ending with the flour.
  • Be careful not to overmix the batter, as this can make the cake tough.
  • Pour the batter into a prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, make the ganache by melting the chocolate and cream together in a heatproof bowl over a saucepan of simmering water.
