1/4 cup each reduced-sodium soy sauce, balsamic vinegar and honey
1 garlic clove, minced
1 pound uncooked medium shrimp, peeled and deveined
1 large green pepper, cut into 1-inch pieces
1 can (8 ounces) pineapple, chunks, drained

Steps:

  • In a small bowl, combine the soy sauce, vinegar, honey and garlic. Set aside 1/3 cup. On eight metal or soaked wooden skewers, thread the shrimp, green pepper and pineapple. Place kabobs in a large resealable plastic bag; pour remaining marinade over kabobs. Cover and chill for 1 hour. Cover and chill reserved marinade., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. 1 small fresh pineapple
1/3 cup orange juice
1/4 cup fresh ginger (peeled and chopped)
16 ounces marlin steaks (1-inch thick)
3 tablespoons fat-free mayonnaise

Steps:

  • Peel and core the pineapple.
  • Cut part of the flesh into 12 (1-inch) cubes and reserve.
  • Coarsely chop the rest of the pineapple and place in a blender.
  • Add the orange juice and ginger.
  • Puree.
  • Pour into a bowl or shallow baking dish.
  • Cut the Marlin into 16 cubes.
  • Add to the pineapple mixture, toss to coat, cover and allow to marinate in the refrigerator for 1 hour.
  • For each serving, alternate four Marlin cubes and three pineapple cubes on an 8-inch skewer.

1 Tbsp sesame oil
1/4 tsp ground ginger
1 tsp garlic powder
8 boneless chicken breast, cut into 2" pieces
1 20 oz can(s) pineapple chunks, drained
1/2 c your favorite bbq sauce (I love Sunset Gourmet's sweet & spicy brown sugar bourbon sauce)

  • 1. In a shallow glass dish, mix the soy sauce, brown sugar, sesame oil, ginger, and garlic powder.
  • 2. Stir the chicken pieces and pineapple into the marinade until well coated.
