29 ounces green beans (canned (2 cans) (or 1 pound fresh, 16 ounces frozen))
1 Tbsp garlic (minced)
1 small onion (chopped)
¼ tsp cayenne pepper (more or less to taste)
1 tsp paprika (smoked or sweet)
1 tsp oregano (dry)
1 tsp marjoram (dry)
1 cup chicken broth (or beef)
salt (to taste)

Steps:

  • Preheat a heavy Dutch oven or pot to low-medium heat.
  • Add oil, garlic, onion, oregano, and marjoram and cook until onion begins to soften, stirring often (5-10 minutes). Take care not to scorch the garlic.
  • Turn heat down to low and add green beans, cayenne pepper, and paprika. Mix together, cover and heat through for 10 minutes. Serve hot.

2 1/4 pounds green beans, ends trimmed
5 tablespoons butter
3 large red bell peppers, thinly sliced
1 large onion, thinly sliced
1/4 cup chopped fresh marjoram
3/4 cup sliced almonds, toasted

Steps:

  • Cook green beans in large pot of boiling salted water until just crisp-tender, about 5 minutes. Drain. Rinse with cold water. Drain well; set aside. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add peppers and onion and sauté until peppers are crisp-tender, about 8 minutes. Mix in marjoram. (Beans and bell pepper mixture can be prepared 1 day ahead. Cover separately and refrigerate.)
