This blueberry buckle recipe came from my grandmother. As children, my sister and I remember going to Pennsylvania for blueberry picking. Mother taught us to pick only perfect berries, and those gems went into this wonderful recipe. -Carol Dolan, Mount Laurel, New Jersey

Tips:

  • Use fresh blueberries: Fresh blueberries will give your buckle the best flavor and texture. If you don't have fresh blueberries, you can use frozen blueberries, but be sure to thaw them completely before using.
  • Don't overmix the batter: Overmixing the batter will make the buckle tough. Mix just until the ingredients are combined.
  • Bake the buckle until the top is golden brown and a toothpick inserted into the center comes out clean: This will ensure that the buckle is cooked through.
  • Serve the buckle warm with ice cream or whipped cream: This will make the buckle even more delicious.
