MARINATED ZUCCHINI SALAD

Marinated Zucchini Salad image

Raw zucchini can be a dull ingredient, but when it's very thinly sliced it marinates beautifully, especially in lemon juice. I like to use a mixture of green and yellow squash here. Assemble this dish at least four hours before you wish to serve it, so that the squash has time to soften and soak up the lemony marinade.

ZUCCHINI WITH MINT

Categories     Vegetable

Time 50m

Yield 30 serving(s)

Number Of Ingredients 6

7 lbs zucchini, cut into 1/2 inch rounds
1/2 cup extra virgin olive oil
1 teaspoon crushed red pepper flakes
salt
freshly ground black pepper, to taste
1/2 cup finely chopped mint

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat 2 large roasting pans in the oven for 5 minutes.
  • Meanwhile, in a large bowl, toss the zucchini with the olive oil and crushed red pepper.
  • Season generously with salt and pepper.
  • Spread the zucchini on the hot pans and roast for 30 minutes without stirring, until the rounds are tender and their bottom are golden.
  • Transfer to a platter, garnish with mint and serve.

Tips:

  • Choose firm and tender zucchini for marinating. Overripe or bruised zucchini will not hold up well in the marinade.
  • Use a variety of fresh herbs in the marinade to add flavor. Mint, basil, oregano, rosemary, and thyme are all good choices.
  • Add a bit of citrus juice or vinegar to the marinade to help tenderize the zucchini.
  • Let the zucchini marinate for at least 30 minutes, or up to overnight. The longer the zucchini marinates, the more flavorful it will be.
  • Grill, roast, or sauté the zucchini until tender. You can also enjoy it raw, sliced in salads or as a refreshing snack.

Conclusion:

Marinated zucchini is a delicious and versatile dish that can be enjoyed in many different ways. With its fresh, tangy flavor, it's a perfect addition to any summer meal. Whether you're grilling, roasting, or sautéing it, marinated zucchini is sure to be a hit. So next time you're looking for a new way to enjoy this healthy vegetable, give marinated zucchini a try.
