GARLIC ANGEL HAIR SHRIMP

Garlic Angel Hair Shrimp image

This was inspired by one of my favorite restaurant pasta dishes. I keep the lemon separate until the end due to a picky family member, but you could add it earlier if everyone likes lemon. Do not use pre-cooked shrimp and don't overcook the shrimp.

YUMMY SPICY SHRIMP WITH ANGEL HAIR PASTA

Yummy Spicy Shrimp With Angel Hair Pasta image

This is one of my husband's favorites (mine, too!). We like the sweet and spicy combination of shrimp, peas, and hot pepper, but it is also good with broccoli, asparagus, or other vegetables, or by itself. We love this with a big green salad and a glass of Shiraz! I use pre-cooked shrimp for this, but you can also use raw - just add them a minute or two earlier to the peas. This looks more complicated than it is - we often rely on this recipe as a quick and easy weeknight dinner. Actual cooking time is only about 10-15 minutes, the prep time is marinading time.

All I can say is this is "Amazing"! With shrimp, pasta, tomatoes, white wine and cream, how can you go wrong? Very easy to put together. Enjoy!

Provided by Marie

Categories     Vegetable

Time 35m

Yield 2 serving(s)

Number Of Ingredients 13

2 tablespoons butter
2 tablespoons olive oil
3/4 lb shrimp, peeled and deveined
2 cloves garlic
1/4 cup heavy cream
1 (14 1/2 ounce) can Italian-style diced tomatoes
1/2 cup white wine
1 cup fresh mushrooms, sliced
3 tablespoons fresh parsley
1/2 cup grated parmesan cheese, divided
1 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 (8 ounce) package angel hair pasta

Steps:

  • In a medium skillet over medium high heat, melt butter with the oil, then add the shrimp and garlic.
  • Cook uncovered for about 5 minutes stirring occasionally until shrimp are done.
  • Remove shrimp to a plate and cover to keep warm.
  • Add remaining ingredients to skillet except for 1/4 c of Parmesan cheese and the pasta.
  • Bring to a boil, reduce heat and simmer for about 15 minutes, stirring occasionally.
  • Cook pasta and drain.
  • Toss shrimp and pasta into the skillet with sauce and distribute everything evenly.
  • Serve topped with the remaining Parmesan cheese.

Tips:

  • Use fresh, large shrimp. Smaller shrimp will cook too quickly and become tough. Devein the shrimp before cooking to remove the sand vein that runs along the back.
  • Make sure the marinade is flavorful. Use a combination of olive oil, lemon juice, garlic, and herbs to create a marinade that will infuse the shrimp with flavor. Marinate the shrimp for at least 30 minutes, or up to overnight.
  • Cook the shrimp properly. Shrimp cooks very quickly, so it's important to not overcook it. Cook the shrimp for 2-3 minutes per side, or until it is pink and opaque.
  • Use a high-quality pasta. Angel hair pasta is a thin, delicate pasta that cooks quickly. It's the perfect pasta for this dish. Cook the pasta according to the package directions.
  • Toss the pasta with the shrimp and sauce. Once the pasta is cooked, toss it with the shrimp, marinade, and any other desired ingredients, such as Parmesan cheese or chopped parsley.

Conclusion:

This marinated shrimp with angel hair pasta is a quick and easy weeknight meal that is sure to please everyone at the table. The shrimp is flavorful and juicy, and the pasta is cooked to perfection. This dish is also a great way to use up leftover shrimp.
