The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

2 medium sweet potatoes
1/2 cup white onion, diced
2 tablespoons olive oil
2 garlic cloves, pressed
1 teaspoon salt (more or less to taste)
