It's bursting with flavor and has become a comfort food staple in our home. Use plain or Italian bread crumbs. We like it with a Caesar salad and garlic mashed potatoes.

1 cup Worcestershire sauce
¼ cup soy sauce
3 cloves garlic, chopped
1 sprig fresh rosemary, bruised
6 lamb chops
2 eggs
1 cup bread crumbs

12 lamb cutlets
1 cup low fat natural yogurt or 1 cup Greek yogurt
2 garlic cloves, crushed
1 tablespoon mint, finely chopped
2 tablespoons coarse grain mustard
1 tablespoon prepared mint sauce
2 large red onions, sliced thinly
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon honey

Steps:

  • Combine all the marinade ingredients in a shallow glass or ceramic dish.
  • Add the lamb cutlets.
  • Toss to coat and refrigerate for 3 hours.
  • Preheat BBQ to medium heat.
  • For honeyed onions.
  • heat oil on BBQ plat or griddle, add onions.
  • cook, stirring constantly for 10 min's.
  • Add vinegar and honey and cook, stirring for a further 5 Min's until onions are soft and golden.
  • For the chops.
  • Drain chops and discard marinade.
  • Cook on a lightly oiled BBQ for 2-3 Min's per side or until cooked to your liking.
  • Serve lamb with onions.

1 (2/3 ounce) package good seasons Italian salad dressing mix
3 tablespoons water
2 tablespoons lemon juice
2 tablespoons olive oil
2 peppercorns or 1/4 teaspoon pepper
1 teaspoon dried oregano
4 lamb chops

Steps:

  • Combine first six ingredients (salad dressing mix- oregano) in small bowl and stir well.
  • Arrange chops in marinating dish and pour marinade over chops.
  • Refrigerate at at least 8 hours.
  • Preheat broiler or prepare grill.
  • Broil or grill chops 4 inches from heat source until meat is cooked to desired doneness, turning and basting with marinade (about 10-15 minutes each side depending on thickness of lamb chops and degree of doneness desired).
