Provided by Iowa Girl Eats

Categories     20 minute meal, 30 minute meal, appetizer, kid friendly, light and healthy, salad, side dish

Yield serves 8-10

Number Of Ingredients 12

2 cups cauliflower florets
2 cups cherry or grape tomatoes (~10oz)
2 cups chopped carrots (~4 medium carrots)
1 cucumber, seeded then chopped
1 bell pepper (any color,) seeded then chopped
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
2 Tablespoons minced shallots
4 teaspoons Dijon mustard
2 teaspoons Italian seasoning
2 cloves garlic, pressed or minced
salt and pepper

Steps:

  • For the Vinaigrette: add ingredients to a jar with a tight-fitting lid or bowl then shake or whisk to combine. Taste then add more salt, pepper, and/or oil if necessary (this dressing is very tart so add more oil if it's too tart for your tastes.)
  • Add vegetables to a very large bowl then dress with 3/4 of the vinaigrette. Toss then refrigerate for 4 hours or up to overnight. Toss with remaining vinaigrette and season with salt and pepper to taste just before serving.

MARINATED FRESH VEGETABLE SALAD

Marinated Fresh Vegetable Salad image

This was published in "Taste of Home" April/May 2012. We enjoy it so much, I make it weekly. I am not a cauliflower fan, so I substitute broccoli, summer squash, and/or zucchini, and also, almost always, use pickling cukes. I also cut the oil and fresh parsley by half, (and I don't measure the veggies). Cook time is chill time.

Tips

  • Use fresh, seasonal vegetables. This will ensure that your salad is packed with flavor and nutrients.
  • Cut your vegetables into uniform pieces. This will help them cook evenly and look more appealing.
  • Don't overcrowd the pan. If you do, the vegetables will steam instead of roast.
  • Roast the vegetables at a high temperature. This will help them caramelize and develop a delicious flavor.
  • Toss the vegetables with a flavorful marinade before roasting. This will help them absorb flavor and prevent them from drying out.
  • Serve the roasted vegetables immediately. They are best enjoyed hot and crispy.

Conclusion

Marinated fresh vegetable salad is a delicious and healthy dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a little planning, you can have a delicious and nutritious salad on the table in no time. So next time you are looking for a healthy and flavorful dish, give marinated fresh vegetable salad a try.
