Yield 5 servings

Number Of Ingredients 6

1/4 cup good olive oil
20 large green olives
20 almonds, roasted
2 whole cloves garlic, peeled
1 branch fresh rosemary
1 orange

Steps:

  • Stuff whole roasted almonds into the cavity of the green olives. Using a vegetable peeler, peel one long piece of rind from the orange. Save orange for another purpose. In a saute pan, heat olive oil on low. Toss in garlic, rosemary, orange rind and olives. When warmed, pour all ingredients into a dish and serve with toothpicks.

Tips:

  • Choose the right olives: For best results, use firm, ripe olives with a mild flavor, such as Castelvetrano or Kalamata olives.
  • Make the marinade ahead of time: The longer the olives marinate, the more flavorful they will be. You can marinate them for up to 2 weeks.
  • Use a variety of herbs and spices: Don't be afraid to experiment with different herbs and spices to create your own unique marinade. Some good options include garlic, rosemary, thyme, oregano, and red pepper flakes.
  • Be patient: It takes time for the olives to absorb the flavors of the marinade. Don't rush the process. Allow them to marinate for at least 24 hours before serving.
  • Serve the olives chilled: Chilled olives are more refreshing and flavorful. Serve them as an appetizer or snack, or use them in salads, pasta dishes, or pizzas.

Conclusion:

Marinated almond-stuffed olives are a delicious and easy-to-make appetizer or snack. They can be made with a variety of herbs and spices, so you can easily customize them to your own taste.
