Yield Serves 2

Number Of Ingredients 6

1 teaspoon finely chopped lemon zest
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
1/2 teaspoon salt
1 1/2 teaspoons chopped fresh rosemary or 1/2 teaspoon crumbled dried
1 tablespoon olive oil
four 1 1/4-inch-thick loin lamb chops (about 1 pound total)

Steps:

  • Preheat the broiler. In a small bowl stir together the zest, the garlic paste, the rosemary, the oil, and pepper to taste, rub the lamb chops with the marinade, and let them marinate on a plate for 20 minutes. Broil the lamb chops on the rack of a broiler pan about 4 inches from the heat for 4 to 5 minutes on each side for medium-rare meat.

Tips:

  • Choose the right cut of lamb: For grilling, choose chops that are at least 1-inch thick. This will help them stay moist and juicy during cooking.
  • Use a flavorful marinade: A good marinade will help tenderize the lamb and add flavor. This recipe uses a combination of olive oil, garlic, rosemary, thyme, and lemon juice.
  • Let the lamb marinate for at least 30 minutes: The longer the lamb marinates, the more flavor it will absorb. If you don't have time to marinate the lamb for 30 minutes, you can still grill it, but it won't be as flavorful.
  • Grill the lamb over medium heat: This will help prevent the lamb from overcooking and becoming tough.
  • Don't overcook the lamb: Lamb is best when it is cooked to medium-rare or medium. Use a meat thermometer to ensure that the lamb is cooked to your desired doneness.

Conclusion:

This marinade is a great way to add flavor to lamb chops or any other type of meat. It is easy to make and can be used with a variety of different herbs and spices. The marinade will help to tenderize the meat and make it more juicy. This marinade is perfect for grilling, roasting, or baking.
