¼ cup red wine vinegar
¼ cup reduced-sodium soy sauce
¼ cup olive oil
1 ½ teaspoons dried parsley flakes
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
5 skinless, boneless chicken breasts, thinly sliced

Steps:

  • Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.
  • Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
  • Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 c. extra-virgin olive oil
1/4 c. soy sauce
3 garlic cloves, chopped
1 tbsp. brown sugar
2 tbsp. lemon juice
1 tbsp. dijon mustard
1 tsp. fresh thyme leaves, chopped
1 tsp. kosher salt
1/2 tsp. ground black pepper
4 lb. bone-in chicken pieces, such as drumsticks, thighs, or leg quarters
1 c. marinade
Oil, as needed

Steps:

  • For the marinade: Combine the olive oil, soy sauce, garlic, brown sugar, lemon juice, dijon mustard, thyme, salt, and black pepper in a pint-sized mason jar. Cover and shake well to combine. Use immediately or store in the refrigerator for up to 4 days before use.
  • For the grilled chicken: Place the chicken in a zip-up gallon bag. Add all of the marinade, seal the bag, and refrigerate for 30 minutes (or up to 4 hours).
  • Meanwhile, pre-heat one side of the grill to medium heat, around 350°, and leave the other side unlit. Oil the grill grates well.
  • Remove the chicken from the marinade and pat dry with paper towels. Discard the remaining marinade. Place the chicken skin-side down over the lit side of the grill. Cover and cook until grill marks appear and the chicken easily releases, 6 to 8 minutes.
  • Flip the chicken and transfer it to the unlit side of the grill. Cover and cook until the internal temperature reads 165˚, 35 to 45 minutes more (depending on the size of your chicken pieces). Let rest for 5 minutes, then serve immediately.

This marinade is enough for 12 pieces of chicken. Recipe is taken from "Savannah Style" a cookbook published by the Jr. League there in 1980. You marinate the chicken pieces, then cook them in a pan on the grill, turning frequently, then remove from pan and place chicken pieces directly on grill for about 10 minutes. Original recipe used in addition 2 1/2 tsp salt, but I think this would be salty enough from the soy sauce, Cooking time is marinating time.

4 medium (4- to 6-ounce) skinless, boneless chicken breasts
2 tablespoons dark brown sugar
1/4 cup fish sauce
1/4 cup soy sauce
2 tablespoons fresh lime juice
2 tablespoons canola oil, plus more for brushing
1 tablespoon hot chile-garlic paste
4 scallions, thinly sliced, greens and whites kept separate
1 teaspoon sesame oil
One 1-inch piece ginger, grated
1 tablespoon toasted sesame seeds

Steps:

  • Butterfly the chicken breasts using a sharp knife, then lightly pound to an even thickness.
  • In a large glass bowl, whisk together the brown sugar, fish sauce, soy sauce, lime juice, canola oil, chile-garlic paste, scallion whites, sesame oil and ginger until combined.
