Steps:
- For the marinade: Combine the olive oil, soy sauce, garlic, brown sugar, lemon juice, dijon mustard, thyme, salt, and black pepper in a pint-sized mason jar. Cover and shake well to combine. Use immediately or store in the refrigerator for up to 4 days before use.
- For the grilled chicken: Place the chicken in a zip-up gallon bag. Add all of the marinade, seal the bag, and refrigerate for 30 minutes (or up to 4 hours).
- Meanwhile, pre-heat one side of the grill to medium heat, around 350°, and leave the other side unlit. Oil the grill grates well.
- Remove the chicken from the marinade and pat dry with paper towels. Discard the remaining marinade. Place the chicken skin-side down over the lit side of the grill. Cover and cook until grill marks appear and the chicken easily releases, 6 to 8 minutes.
- Flip the chicken and transfer it to the unlit side of the grill. Cover and cook until the internal temperature reads 165˚, 35 to 45 minutes more (depending on the size of your chicken pieces). Let rest for 5 minutes, then serve immediately.
MARINADE FOR CHICKEN ON THE GRILL FROM SAVANNAH
This marinade is enough for 12 pieces of chicken. Recipe is taken from "Savannah Style" a cookbook published by the Jr. League there in 1980. You marinate the chicken pieces, then cook them in a pan on the grill, turning frequently, then remove from pan and place chicken pieces directly on grill for about 10 minutes. Original recipe used in addition 2 1/2 tsp salt, but I think this would be salty enough from the soy sauce, Cooking time is marinating time.

MARINATED CHICKEN
I set out to create the ultimate all-purpose marinade, and after spending many hours in the laboratory, I developed the perfect formula for balanced flavor. Fellow food lovers, I give you S.A.S.H.A. It stands for Salt, Acid, Savory, Heat, and Allium. All you need to do is combine ingredients that represent those flavor elements and you have yourself a fantastic marinade. I love using soy and/or fish sauce as my salty elements because they provide the perfect level of salt and savoriness and pack in the flavor. This marinade is perfect for all proteins: beef, poultry, pork and fish!

Steps:
- Butterfly the chicken breasts using a sharp knife, then lightly pound to an even thickness.
- In a large glass bowl, whisk together the brown sugar, fish sauce, soy sauce, lime juice, canola oil, chile-garlic paste, scallion whites, sesame oil and ginger until combined. Add the chicken and turn to coat in the marinade. Cover and let marinade in the refrigerator for at least 2 or up to 4 hours.
- Preheat a grill or grill pan over medium-high heat until hot.
- Remove the chicken from the marinade and transfer to a paper-towel-lined baking sheet. Use paper towels to dab off some of the marinade.
- Brush the grill with canola oil, then grill the chicken until fully cooked, 3 to 5 minutes per side. Transfer the chicken to a platter and garnish with the scallion greens and sesame seeds. Serve.
Tips for the Best Grilled Chicken Marinade:
- Use a flavorful oil: Olive oil, avocado oil, or coconut oil are all great options.
- Add some acidity: Lemon juice, lime juice, or vinegar will help tenderize the chicken and add brightness to the flavor.
- Use fresh herbs and spices: Rosemary, thyme, basil, oregano, garlic, and chili powder are all great choices.
- Don't be afraid to experiment: There are endless possibilities when it comes to creating a marinade. Get creative and have fun!
- Let the chicken marinate for at least 30 minutes, but no longer than 24 hours: This will give the marinade time to penetrate the chicken and infuse it with flavor.
- When you're ready to grill the chicken, be sure to preheat your grill to medium-high heat: This will help to prevent the chicken from sticking and will give it a nice char.
- Cook the chicken until it is cooked through: The internal temperature should be 165 degrees Fahrenheit.
- Let the chicken rest for a few minutes before serving: This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.
Conclusion:
A good marinade can make all the difference when it comes to grilled chicken. By following these tips, you can create a marinade that will infuse your chicken with flavor and make it the star of your next barbecue.
