Number Of Ingredients 15

Shortbread base:
1 1/2 sticks (3/4 cup) unsalted butter
2 cups all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon salt
Cheesecake:
16 ounces cream cheese, softened
2 large eggs
3/4 cup sugar
3 tablespoons cornstarch
1/4 cup lime juice
1 1/2 ounces tequila
1 1/2 ounces triple sec
1 tsp lime zest (1 lime)
hot shortbread base

Steps:

  • Preheat oven to 350°F. Shortbread base: Cut butter into 1/2-inch pieces. In a food processor process all ingredients until mixture begins to form small lumps. Sprinkle mixture into a 13 x 9 x 2-inch baking pan and with a metal spatula press evenly onto bottom. Bake shortbread in middle of oven until golden, about 20 minutes. While shortbread is baking, prepare topping. Cheesecake topping: In a bowl whisk cream cheese until smooth. Whisk in sugar, cornstarch, lime juice, tequila, & triple sec. Whisk in eggs & zest. Evenly spread over hot shortbread and pour cream-cheese mixture over it. Bake in middle of oven until slightly puffed, about 30 minutes. Cool completely in pan and cut into 24 bars. Bar cookies keep, covered and chilled, 3 days.

Tips:

  • Use fresh limes: Fresh limes provide the most intense and authentic flavor for your margarita bars. If you can't find fresh limes, you can use bottled lime juice, but be sure to choose a high-quality brand.
  • Chill your ingredients: Chilling your ingredients before making your margarita bars will help them to set up properly and give them a more refreshing flavor. You can chill your tequila, triple sec, and lime juice in the refrigerator or freezer for at least 30 minutes before using.
  • Use a quality tequila: The tequila you use will make a big difference in the flavor of your margarita bars. Choose a tequila that is made from 100% blue agave and has a smooth, clean flavor. Avoid using cheap tequilas, as they can make your margarita bars taste harsh and unpleasant.
  • Don't skimp on the salt: The salt on the rim of your margarita bars is an essential part of the experience. It helps to balance out the sweetness of the margarita and adds a savory flavor that really makes the drink pop. Be sure to use a coarse salt, such as sea salt or kosher salt, for the best results.
  • Garnish with lime wedges: Lime wedges are a classic garnish for margarita bars. They add a pop of color and a refreshing citrus flavor. You can also use other garnishes, such as mint leaves, strawberries, or pineapple slices.

Conclusion:

Margarita bars are a delicious and refreshing treat that are perfect for any occasion. They're easy to make and can be customized to your own personal taste. With a little planning and preparation, you can make margarita bars that will impress your friends and family. So next time you're looking for a fun and festive drink, give margarita bars a try. You won't be disappointed!
