Categories     Sauce     Onion     Tomato     Vegetarian     Butter     3-Ingredient Recipes     Pasta     Dinner

Yield Makes enough for 1 pound dried pasta

Number Of Ingredients 4

2 pounds ripe tomatoes, or 3 cups canned whole peeled tomatoes with their juice
1 medium sweet yellow onion
5 tablespoons butter
1 1/4 teaspoons salt

Steps:

  • If using fresh tomatoes, peel them. Coarsely chop the fresh or canned tomatoes. Trim both ends of the onion; peel it and cut it in half lengthwise.
  • Put the tomatoes, onion, butter, and salt in a 4- to 5-quart saucepan over medium heat. When the tomatoes begin to bubble, lower the heat to a slow but steady simmer. Cook, stirring every 10 to 15 minutes, until the tomatoes are no longer watery and the sauce has reduced, about 45 minutes, depending on the size and shape of the pot. The sauce is done when the butter has separated from the tomatoes and there is no remaining liquid.

Tips:

  • Use the best tomatoes you can find. Fresh, ripe tomatoes are essential for a great tomato sauce. If you can, use tomatoes from your own garden or from a local farmer's market.
  • Don't skimp on the olive oil. Olive oil is what gives tomato sauce its rich, flavorful base. Use a good-quality extra-virgin olive oil for the best results.
  • Cook the onion slowly. The onion should be cooked slowly over low heat until it is very soft and translucent. This will bring out its sweetness and prevent it from overpowering the other flavors in the sauce.
  • Use a combination of fresh and dried herbs. Fresh herbs add a bright, lively flavor to the sauce, while dried herbs add a more subtle, background flavor. Use a mix of herbs such as basil, oregano, thyme, and rosemary.
  • Simmer the sauce for at least 30 minutes. This will allow the flavors to meld and develop. The longer you simmer the sauce, the better it will taste.
  • Season the sauce to taste. Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of sugar to balance out the acidity of the tomatoes.

Conclusion:

Marcella Hazan's tomato sauce is a classic for a reason. It is simple to make, yet incredibly flavorful. With just a few fresh ingredients and a little bit of time, you can create a delicious sauce that will elevate any pasta dish. So next time you're looking for a quick and easy weeknight meal, give this recipe a try. You won't be disappointed.
