- Preheat the oven to 450 degrees F.
- For the crust: In a large bowl, combine the graham cracker crumbs, butter and sugar. Press into a 9-inch springform pan, pushing the crumbs up the sides. Put the pan in the freezer to chill.
- For the filling: Microwave the chocolate and butter in a microwave-safe bowl until melted, about 1 minute. Set aside.
- Beat together the cream cheese, sugar and vanilla in a large bowl with an electric mixer on medium speed until light and fluffy. Beat in the eggs 1 at a time until well combined. Mix in the cream. Transfer 2 to 3 cups of the batter to a smaller bowl and stir in the melted chocolate mixture. Pour the remaining batter into the chilled crust. Drizzle in the chocolate batter and swirl with a knife.
- Bake for 15 minutes, then reduce the oven temperature to 300 degrees F and bake until the outside is set and the very center just wobbles slightly, about another hour. Turn off the oven and let the cheesecake cool in the oven for 30 minutes. Serve at room temperature or chilled.

- Cream together cream cheese& eggs.
- Make sure they are both at room temperature.
- if possible this will prevent lumps.
- Add in sugar and vanilla and mix.
- In separate bowl, combine crushed cookies with melted butter.
- In large springform pan, press the cookies mixture only in the bottom of the pan (Not the sides).
- Reserve 1/4 of the batter and set aside.

- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine cookie crumbs, almonds, 1/4 cup sugar and melted butter. Mix well. Press into the bottom and halfway up the sides of a 10 inch springform pan.
- In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.

- Heat oven to 350°. Toast almonds on a small baking sheet for 10 minutes, stirring occasionally. Remove from oven; reduce heat to 325°. Coat an 8-inch springform pan with cooking spray. Wrap outside of pan in foil to prevent seepage. Process chocolate wafers and almonds in a food processor until fine crumbs. Sprinkle 2 to 3 tablespoon crumbs onto bottom of pan (just enough to coat bottom lightly). Shake pan to distribute evenly. Reserve remaining crumbs.
- Filling:
- Purée ricotta in a food processor until smooth, about 1 minute. Add cream cheese, sugar, sour cream, egg, egg whites, almond extract, flour and salt; puree until smooth. Whisk amaretto, if desired (or same amount of hot water), 2 tablespoon hot water, cocoa powder and espresso powder in a bowl until well combined. Stir in chocolate chips. - Bake 32 to 40 minutes or until sharp knife inserted 1 inch from side of pan comes out clean (center will not be set). Cool 30 minutes on cooling rack. Refrigerate 30 minutes. ROYAL MARBLE CHEESECAKE
I am posting this recipe at the request of another Zaar member. She had the recipe and had lost the cookbook it was in. It came out of the Pillsbury Bake-Off Cookbook in 1965. I will have to admit that I have never tried it, but she assured me that it was the best cheesecake that she had ever eaten. It does look yummy. Of course we all know there's no such thing as bad chocolate anything! LOL I'll have to admit that I guessed at the prep time and only put down the time the cheesecake is in the oven as passive work time. I did not list the time for cooling and chilling the cake.

- Preheat Oven to 400 degrees.
- Melt the chocolate in the top of a double boiler, over hot water.
- Combine 3/4 cup flour, 2 tablespoons sugar and salt.
- Cut in butter until particles are fine.
- Stir in 2 tablespoons chocolate.
- Press into the bottom of a 9 inch springform pan.
- Bake for 10 minutes.
- In a large mixing bowl, cream 1 cup of sugar and the cream cheese.
- Blend in 1/4 cup flour and the vanilla extract.
- Add the egg yolks and beat well.
- Blend in the sour cream.
- In a separate bowl, beat the egg whites until soft peaks form.
- Fold the beaten egg whites into the cream cheese mixture, making sure it is thoroughly mixed.
- Combine the remaining chocolate mixture with 1 3/4 cups of the cream cheese mixture.
- Pour 1/2 of remaining cream cheese mixture into prepared crust.
- Spoon 1/2 of chocolate mixture over the top of the cream cheese mixture in the crust.
- Pour the remaining cream cheese mixture over the top of this and then spoon on the remaining chocolate mixture.
- Cut through the batter with a spatula to create the marble effect.
- Put the cheesecake into the 400 degree oven and immediately turn the oven down to 300 degrees.
- Bake for 1 hour.
- Turn the oven off and let the cheese sit in the closed oven for 1 hour.
- Cool on a rack away from drafts for 2-3 hours.
- Chill at least 6 hours before serving.
- To cut, use a wet, hot, sharp knife.
LOW CARB MARBLE CHEESECAKE
This recipe was given to me by a friend. I don't know where she got it. It's wonderful. I like the fact that you don't have to make a crustless cheesecake for it to be low carb. - 1. Preheat oven to 350 degrees F. You will need a 9 inch square or round spring form pan. Crush enough cookies to make 2 1/4 cups.
- 2. Pour crumbs into a bowl add sugar and melted butter, then pour into spring form pan. Then press to bottom and about 1-2 inches up the sides of the pan. Place in preheated oven and bake for 8-10 minutes, then remove from oven, set aside and allow to cool. LOWER OVEN TEMPERATURE TO 325 DEGREES F.
- 3. These are the main flavorings for this cheesecake.
- 4. Now add the softened cream cheese to a large bowl, & beat till creamy. Then add in the eggs one at a time and the pudding & pie filling, beating until well blended. Add the sour cream, and Irish Cream and beat just until blended & smooth.
- 5. Remove at least 3 cups of the cheesecake mixture to a smaller bowl.To this mixture add the Nutella Hazelnut spread, 1 Tablespoon Vanilla Bean Paste or extract, and 1 teaspoon of coffee extract, blend together until thoroughly mixed. Set aside till needed. Use a medium size spoon in the smaller bowl.
- 6. To the larger bowl add 1 Tablespoon of vanilla Bean Paste and 1 teaspoon amaretto extract, blend together till thoroughly mixed. Add a medium size spoon to the larger bowl, but keep it separate from the other bowl.
- 7. Now using the bowl with the white cream cheese , alternate spoons of the white filling. Then fill in the gaps with the chocolate mixture.
- 8. Repeat until you have alternated both colors into the spring form pan. Now using a butter knife carefully drag the knife through the cheesecake mixture, being extra careful not to touch the bottom or the sides of the cake pan. Top of cake should resemble something like this picture. Boil about 5 cups of water & set aside till needed. This is for the water bath for the cheese cake.
- 9. Now cover the bottom of cheesecake pan with heavy duty foil making sure it goes up on sides of pan. I used three layers of foil. Wrap tightly around the bottom of pan. This prevents the water from seeping into bottom of crust during cooking.
- 10. Now Using a larger pan with sides, that will allow you to sit the cheesecake pan inside. Add the cheesecake, then carefully pour the boiling water inside pan, then close oven door and allow cheesecake to cook for 50 minutes. NOW LOWER OVEN TEMPERATURE TO 300 DEGREES F. and CONTINUE BAKING FOR AN ADDITIONAL 30 MINUTES. After 30 minutes has elapsed, TURN OVEN OFF, but LEAVE CAKE IN OVEN FOR AN ADDITIONAL HOUR. Now remove from oven and allow to cool completely to room temperature. Refrigerate for at least 3-4 hours, or preferably over night before serving.

- 1. Preheat oven to 350 degrees F. You will need a 9 inch spring form pan round or square. Toast hazelnuts in shallow pan in preheated 350 degrees F. oven for 10 to 15 minutes.
- 2. Remove from oven and place on a thick towel. Cover and allow to sweat a bit, about 10 minutes till cooled.
- 3. After 10 minutes has elapsed, leave nuts covered and rub back and forth between the towel to remove most of the dark husk. Add nuts to a large zip lock bag and break up into small pieces with a mallet.
- 4. Add the graham cracker Crumbs and melted butter in a medium bowl. Stir in 1/2 cup of the toasted nuts, reserving the remainder 1/4 cup as a garnish for the top, add sugar, and blend till crumbs are moist.
- 5. Pour into spring form pan and press into bottom of pan, and about 2 inches up the sides of pan, till crust is smooth.
- 6. Place in preheated 350 degrees F. oven and bake for 8 minutes. Remove from oven and allow to cool till needed.
- 7. After the crust has had time to cool, line the bottom with at least 3 layers of aluminum foil, bringing it up along the sides of the pan and wrapping it as tightly as possible. This is to prevent water from seeping into the bottom of the cheesecake pan. While it is cooking in a water bath.
- 8. Now reduce oven temperature to 325 degrees F. Fill a kettle or large pot with water, and allow it to come to a boil while you prepare the cheesecake. Add the 4 packs of softened cream cheese to a medium size bowl.
- 9. Add Cheesecake pudding & pie filling to cream cheese along with sugar, & sour cream, and beat till blended.
- 10. Add eggs, one at a time beating after each addition.
- 11. Next add Frangelico Liqueur, Vanilla Bean Paste, & Almond Extract, & beat till blended.
- 12. Now remove at least 2 1/2 - 3 cups of batter from larger bowl to a smaller bowl.
- 13. Add the Hazel Nut Spread to the smaller bowl.
- 14. Beat till mixture is blended together. I did not want equal parts of chocolate and white, because my husband does not like a lot of chocolate, so I wanted a milk chocolate color instead of a deep chocolate. But you can add more if you like.
- 15. Now alternate the chocolate and white cheesecake mixture from each bowl using a separate spoon for each bowl, by dropping into the cooled graham cracker crust. I wanted more white than chocolate, with just a hint of the hazel nut spread. Smooth out top of cheese cake, then place cheesecake pan into a larger pan. Add enough boiling water to come up along the sides of the cheesecake pan. Then bake in preheated 325 degrees F. oven for 50 minutes.
- 16. REDUCE TEMPERATURE TO 300 DEGREES f. AND CONTINUE TO COOK FOR AN ADDITIONAL 30 MINUTES.
- 17. Now turn OVEN OFF, BUT LEAVE CHEESECAKE IN OVEN FOR AN ADDITIONAL HOUR. THEN REMOVE CHEESECAKE FROM OVEN AND COOL COMPLETELY ON A WIRE RACK. Then cover with saran wrap and & refrigerate & cool for 4-5 hours or preferably overnight.
- 18. Prepare the French vanilla pudding topping by adding the pudding mix to a small bowl, add 1 cup of heavy whipping cream or cold 2%milk, 1/3 cup sour cream and 1 teaspoon Frangelico. Beat together till stiff.
- 19. Spread over top of cheesecake till smooth.
- 20. Add reserved toasted hazel nuts. Top with Hershey Hugs Candy Kiss candy if desired.

This is my favorite cheesecake and what I make if I am really looking to indulge myself, my family, and my friends. You really need people with which to share this! The chocolate marbling through the vanilla is so pretty. A crustless cheesecake so it's gluten-free. From a famous mouse's cookbook but altered slightly from the original.

- Beat cream cheese until smooth. (seriously, no lumps!)
- Add sugar, vanilla, and lemon flavoring and mix well.
- Slowly add the eggs, one at a time, mixing well after each addition.
- Add 1/2 cup heavy cream and blend until smooth.
- Lightly grease and flour (can skip the flouring to make it gluten-free or use alternative) a 9-inch springform pan and preheat oven to 400 degrees.
- Remove 1 1/2 cups of cheese mixture to a small bowl and stir in the melted chocolate.
- Add remaining 1/4 cup cream to remaining cheese mixture and pour into springform pan.
- Add 1 1/2 cups of chocolate cheese mixture to pan in spoonfuls dotted around top of cake.
- With tip of knife, run blade through cheesecake, swirling mixture together.
- Place springform pan in a water bath and bake for 15 minutes.
- Reduce temperature to 325 degrees and cook an additional 40 to 50 minutes, until center of cheesecake is set.
- Cool and refrigerate for at least 6 hours.
- Tips: It's generally done when there is only a 2-3 inch spot in the center that jiggles. Several small cracks is fine and often just he nature of the cheesecake but if you get a larger crack through the middle of it, then it is a sign that it has been over baked.
- Also, if you cool the cheesecake too quickly you may get cracks. Let it cool on top of one of the stove burners with an inverted plate resting on top.
REESE'S MARBLE CHEESECAKE

- 1. Crust: With knife or food processor, chop 1/3 cup peanut butter chips. Stir together crumbs, cocoa, powdered sugar and butter in medium bowl. Stir in chopped peanut butter chips. Press firmly onto bottom of 9 inch spring for pan.
- 2. Beat cream cheese, 3/4 cup sugar, sour cream and vanilla in large bowl on medium speed of electric mixer until smooth. Add eggs and flour; beat until blended.
- 3. Beat cocoa, remaining 1/4 cup sugar and oil with 1 1/2 cups cheese mixture in medium bowl. Place 1 1/3 cups peanut butter chips and milk in small microwave-safe bowl. Microwave at medium for 30 seconds; stir, if necessary, microwave at medium an additional 15 seconds at a time, stirring after each heating, until chips are melted when stirred. Gradually add warm peanut butter mixture to remaining vanilla batter; beat on high speed 5 minutes.
- 4. Spoon peanut butter and chocolate mixtures alternately over prepared crust. Gently swirl with knife or spatula for marbled effect.
- 5. Bake at 450 degrees for 10 minutes. Without opening oven door, decrease temperature to 250 degrees and continue to bake for 30 minutes. Turn off oven; leave cheesecake in oven 30 minutes without opening door. Remove from oven to wire rack; with knife, loosen cake from side of pan. Cool completely; remove side of pan. Refrigerate until serving time. Cover; refrigerate leftover cheesecake.
- 6. Cheesecakes are less likely to crack if baked in a water bath.
