3 cups cooked long grain rice
3 cups 2% milk
1/3 cup sugar
2 tablespoons butter
1/4 teaspoon salt
2 egg yolks, lightly beaten
1/2 cup chopped maraschino cherries
1 teaspoon vanilla extract
TOPPING:
1/3 cup sugar
2 tablespoons maraschino cherry juice
Dash salt
1 egg white
1/4 teaspoon cream of tartar
1/4 teaspoon almond extract
Maraschino cherries, optional

Steps:

  • In a large heavy saucepan, combine the rice, milk, sugar, butter and salt. Bring to a boil over medium heat. Cook for 15 minutes or until thick and creamy, stirring occasionally. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly., Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat.
